How to Make Refreshing and Spicy Kimchi Bean Sprout Soup (Perfect for Hangover or as a Side Dish)
Let’s make a hot and spicy bean sprout soup! It’s even more delicious with the addition of kimchi. This soup is known for its comforting, slightly fiery broth that warms you up from the inside.
Main Ingredients- 1 bag of bean sprouts (approx. 200-300g)
- 1/4 head of kimchi (preferably ripe kimchi)
- 1 Cheongyang chili pepper
- 1/2 stalk of green onion

Today, we’ll be making a simple yet delicious Kimchi Bean Sprout Soup. It’s a special broth dish that gains a refreshing and spicy kick by adding kimchi and gochugaru to a clear bean sprout soup. It’s perfect for hangovers or as a comforting side dish for any meal. Shall we get started?

First, wash the bean sprouts thoroughly under running water. Make sure to drain them completely to avoid any bean smell, then set aside in a colander.

Finely chop the Cheongyang chili pepper to add a spicy flavor. You can remove the seeds or adjust the amount according to your preference. Slice the green onion diagonally as well.

For the kimchi, you don’t need to remove too much of the filling. If you prefer a clearer broth, you can lightly scrape out some of the filling, then chop the kimchi into bite-sized pieces. There’s no need to discard the kimchi juice.
Step 5
Pour the prepared broth (or rice water) into a pot and add the chopped kimchi. Season with 1 tablespoon of soup soy sauce or salt, and add 1 tablespoon of gochugaru for spiciness. Bring it to a rolling boil over high heat.

Once the broth starts boiling, add the washed bean sprouts. To ensure they cook through without losing their crispiness, boil for about 5-7 minutes WITHOUT covering the pot. (Covering the pot can sometimes impart a bean smell.)

When the bean sprouts are cooked, add the chopped Cheongyang chili pepper, minced garlic, and green onion. Let it simmer for a little longer to allow the flavors to meld together, about 1-2 minutes.

And there you have it – a hot and spicy Kimchi Bean Sprout Soup is ready! Taste and adjust the seasoning with salt or soup soy sauce if needed. Feel free to adjust the amount of Cheongyang chili pepper and gochugaru to your liking for an even more delicious soup.
