Main Ingredients- 1 bag bean sprouts (approx. 200-250g)
- 1/4 head napa cabbage kimchi (preferably aged or fermented)
- 1 Korean chili pepper (cheongyang chili)
- 1/2 stalk green onion
- 700ml broth or rice water

Hello everyone! Today, we’re going to make a refreshing and spicy Kimchi and Bean Sprout Soup using aged kimchi. It’s perfect as a hangover cure or when you need a warm soup dish for your meal. Shall we get started?

First, rinse the bean sprouts thoroughly under running water and drain them. It’s important to wash them well to avoid any unpleasant smell.

Chop the kimchi into bite-sized pieces. We will only use the kimchi itself, not the filling inside. You don’t need to squeeze out any excess liquid from the kimchi. Aged kimchi will give the soup a deeper and more refreshing flavor.
Step 4
Thinly slice the Korean chili pepper for a spicy kick, and also slice the green onion to add aroma and flavor.

Pour the prepared broth (or rice water) into a pot. Add the chopped kimchi, 1 tablespoon of red chili powder for color and heat, and 1 tablespoon of soup soy sauce or salt for basic seasoning. Bring it to a boil. Using soup soy sauce is recommended initially as it complements the kimchi flavor better than just salt.

Once the broth starts boiling, add the prepared bean sprouts. To keep the bean sprouts crisp and prevent them from becoming mushy, it’s best to cook them uncovered. This also helps to release any fishy smell from the sprouts.

When the bean sprouts are cooked and the soup looks clear, add the sliced Korean chili pepper, minced garlic, and sliced green onion. Simmer for a short while on high heat to allow the flavors to meld. Be careful not to overcook, as the bean sprouts can become too soft.
