Main Ingredients

  • 2 cups water (approx. 400ml)
  • 1 package fish cakes (approx. 200-250g)
  • 1/2 head napa cabbage kimchi (approx. 300-400g)
  • 1 ladle kimchi brine (approx. 100ml)
  • 1/2 medium onion
  • 1/2 stalk green onion

Cooking Instructions

Step 1

First, prepare the fish cakes. Lightly rinse the fish cakes under running water to remove any debris. Then, cut them into bite-sized pieces (about 2-3 cm wide). Cutting them too small might cause them to break apart during cooking, so aim for a moderate size.

Step 1

Step 2

Peel and slice the onion, or chop it coarsely. Slicing allows the sweetness to infuse into the broth, while chopping makes the broth richer. Choose based on your preference.

Step 2

Step 3

Pour 2 cups (approx. 400ml) of water into a pot and bring it to a boil over high heat.

Step 3

Step 4

Once the water starts boiling, add the well-fermented napa cabbage kimchi, cut into manageable pieces, and about 1 ladle (approx. 100ml) of kimchi brine. The kimchi brine will add a deep and rich flavor to the soup.

Step 4

Step 5

Add the sliced onion to the pot.

Step 5

Step 6

Now, add the prepared fish cakes to the pot. They will absorb the broth and become even more delicious.

Step 6

Step 7

It’s time to season the broth and add a spicy kick. Add 1/2 Tbsp of chili powder for a pleasant heat.

Step 7

Step 8

Add 1/2 Tbsp of minced garlic to enhance the aroma. The garlic flavor will elevate the overall taste of the soup.

Step 8

Step 9

Finally, add 1/2 Tbsp of plum extract for a touch of sweetness and depth. If the broth tastes a bit bland, season it with salt. It’s important to taste and adjust the seasoning to your preference.

Step 9

Step 10

Now, let all the ingredients meld together. Slice the green onion diagonally to use as a garnish at the end. Continue to simmer for about 5-7 more minutes, or until the fish cakes are plump and puffed up.
