Make a Hearty and Spicy Kimchi Dumpling Soup Perfect for Rainy Days
I made a spicy and invigorating Kimchi Dumpling Soup with the addition of kimchi. It’s a dish that especially comes to mind on rainy days.
Ingredients- 15 Dumplings (store-bought or homemade)
- 2,000ml Water (about 8 cups)
- 3 handfuls of well-fermented Kimchi (approx. 300g)
- 1 pack of soup stock sachet (e.g., anchovy and kelp)
- 2 Eggs
- Pinch of Salt
- 1 stalk of Green Onion
- 2 Tbsp Fish Sauce
- 1 Tbsp Chicken Stock (optional, for enhanced umami)
- 1 Tbsp Minced Garlic
- A little Seaweed Flakes (for garnish)
- A little Black Pepper (for garnish)
- 5 Tbsp Kimchi Brine
Cooking Instructions
Step 1
In a large pot, add 2,000ml of water and place the soup stock sachet. Bring to a boil over medium heat and simmer for about 20 minutes to extract a deep, savory flavor from ingredients like anchovies and kelp.

While the water is boiling, chop the well-fermented kimchi into bite-sized pieces, which will be key to the soup’s spicy flavor. Also, prepare about 5 tablespoons of kimchi brine to add extra kick.

After simmering the stock sachet for 20 minutes, remove it from the pot. Then, add the chopped kimchi and kimchi brine, and bring to a boil to create the flavorful kimchi broth base. Let it simmer until the kimchi softens.

To enhance the soup’s depth, add 2 tablespoons of fish sauce for seasoning. If you want an even richer umami flavor, consider adding 1 tablespoon of chicken stock.

Add 1 tablespoon of minced garlic to further develop the aromatic profile of the kimchi dumpling soup. Let it simmer together, allowing the garlic aroma to meld into the broth over medium heat.
