Spicy Kimchi Fried Rice Kimbap & Savory Fish Cake Kimbap
How to Make Delicious Kimchi Fried Rice Kimbap and Fish Cake Kimbap!
I suddenly craved kimbap this morning! I quickly prepared the rice and fillings, and since I had plenty of kimchi at home, I decided to make kimchi fried rice kimbap. I also had fish cake, so I made that into kimbap too. This recipe offers a delightful twist on traditional kimbap with bold flavors.
Kimbap Ingredients
- 7 sheets of kimbap seaweed (nori)
- 5 bowls of cooked rice
- A little bit of kimchi
- 2 sheets of fish cake
- A little bit of carrot
- 3 Tbsp sesame oil
- A little bit of spinach
- 2 eggs
- A pinch of salt
- A pinch of sugar (optional)
Pork Marinade
- 200g pork (sliced)
- 1.5 Tbsp soy sauce
- 1 Tbsp oligodang (corn syrup)
- 0.5 Tbsp minced garlic
- 0.5 tsp grated ginger
- A pinch of pepper
Fish Cake Seasoning
- 1 tsp soy sauce
- 1 tsp oligodang (corn syrup)
- A little bit of cooking oil
- 200g pork (sliced)
- 1.5 Tbsp soy sauce
- 1 Tbsp oligodang (corn syrup)
- 0.5 Tbsp minced garlic
- 0.5 tsp grated ginger
- A pinch of pepper
Fish Cake Seasoning
- 1 tsp soy sauce
- 1 tsp oligodang (corn syrup)
- A little bit of cooking oil
Cooking Instructions
Step 1
First, let’s prepare the kimchi stir-fry. Trim the tough ends off the kimchi and chop it finely. Heat a little cooking oil in a pan over medium heat and add the chopped kimchi. Stir-fry until it becomes tender and fragrant. Then, add 1 Tbsp of oligodang to balance the acidity of the kimchi and enhance its savory flavor. Finish with 1 Tbsp of sesame oil for a pleasant aroma.
Step 2
Next, we’ll stir-fry the fish cake. Thinly julienne the two sheets of fish cake. Heat a little cooking oil in a pan, add the julienned fish cake, and stir-fry. Add 1 tsp of soy sauce and 1 tsp of oligodang, stirring until the seasoning is well absorbed by the fish cake. Cook over low to medium heat to prevent burning.
Step 3
Now, let’s make the egg omelet. Crack two eggs into a bowl and whisk them with a pinch of salt, a pinch of sugar (optional), a pinch of pepper, and 1 tsp of mirin. Lightly oil a heated pan and pour in the egg mixture over low heat. Cook slowly until a thick, golden omelet is formed without burning. Let it cool slightly before slicing.
Step 4
For the kimchi fried rice kimbap, let’s marinate the pork. Combine 200g of thinly sliced pork (such as shoulder cut) with 0.5 Tbsp minced garlic, 0.5 tsp grated ginger, 1.5 Tbsp soy sauce, 1 Tbsp oligodang, and a pinch of pepper. Mix well to marinate.
Step 5
Place the marinated pork in a heated pan over medium heat and stir-fry until the sauce is reduced and the pork is cooked through. Break up any clumps of pork as it cooks, ensuring the marinade coats the meat evenly.
Step 6
Time for the stir-fried carrots. Julienne the carrot thinly. Heat a little cooking oil in a pan, add the julienned carrots, and stir-fry with a pinch of salt until they are slightly softened but still retain some crunch. (Tip: Carrots are rich in beta-carotene and Vitamin A, which are fat-soluble vitamins. Stir-frying them in oil can increase their absorption.)
Step 7
Season the warm cooked rice with 1 Tbsp of sesame oil and a pinch of salt. Gently mix with a spatula, fluffing the rice so the grains are separated and don’t stick together. This seasoning helps the rice absorb flavor evenly and prevents the kimbap from falling apart.
Step 8
Lay a sheet of kimbap seaweed on a cutting board, shiny side down. Spread about 2/3 of the seasoned rice thinly and evenly over the seaweed. Be gentle to avoid crushing the rice grains. Well-spread rice ensures a neat kimbap roll.
Step 9
Now it’s time to add the fillings. For the kimchi fried rice kimbap, place the prepared kimchi stir-fry and the cooked pork over the rice.
Step 10
Distribute the kimchi stir-fry and pork evenly over the rice. Avoid overfilling, as it can cause the kimbap to burst when rolled.
Step 11
Starting from the bottom edge, tightly roll the kimbap using a bamboo mat. You can dab a little rice on the edge of the seaweed to help seal the roll. Your delicious kimchi fried rice kimbap is now complete!
Step 12
For the fish cake kimbap, layer the stir-fried fish cake, stir-fried carrots, and sliced egg omelet generously. Don’t be shy with the fillings! After rolling, lightly brush the outside of the kimbap with sesame oil for a glossy finish and enhanced flavor.
