Main Ingredients
  • 1 packet Hotteok Mix
  • 200ml Warm Water
  • 1 cup Kimchi (finely chopped)
  • 1 handful Glass Noodles (approx. 60g)
  • 30g Chives (finely chopped)
  • 1/4 Onion (approx. 40g, finely minced)

Seasoning for Kimchi Japchae Filling
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Sugar
  • 1/2 Tbsp Minced Garlic
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1/2 Tbsp Sesame Oil
  • Pinch of Black Pepper

Cooking Instructions

Step 1

First, prepare your filling ingredients: Finely chop the kimchi, chives, and onion into about 0.5cm pieces. If using dried glass noodles, soak them in water until softened, then boil briefly until tender. Drain and cut into manageable lengths.

Step 2

In a bowl, dissolve the yeast packet that comes with the hotteok mix in 200ml of lukewarm water. Stir gently and let it sit for a few minutes until it becomes foamy, ensuring the yeast is active.

Step 3

In a larger bowl, add the hotteok mix. Gradually pour in the activated yeast water, mixing until a dough forms. Knead the dough for about 5-7 minutes until it’s smooth and elastic. Cover the bowl with plastic wrap and let it rest for about 15-20 minutes.

Step 4

Heat a lightly oiled pan over medium heat. Add the minced onion and sauté until softened and translucent. Then, add the chopped kimchi and chives, stir-frying until the kimchi is tender and fragrant. If your kimchi is very sour, you can add a pinch of sugar here.

Step 5

Add the prepared glass noodles to the pan with the stir-fried vegetables. Stir-fry everything together, making sure the noodles don’t stick together, until they are fully cooked and absorb the flavors.

Step 6

Once the noodles are cooked, add all the seasoning ingredients for the filling: soy sauce, sugar, minced garlic, gochugaru, sesame oil, and black pepper. Stir well to combine everything evenly. Your delicious Kimchi Japchae filling is ready!

Step 7

Divide the rested dough into portions, about the size of a golf ball. Flatten each portion into a disc, then place a generous spoonful of the Kimchi Japchae filling in the center. Carefully pinch the edges of the dough together to seal the filling inside, shaping it into a round hotteok.

Step 8

Heat a generous amount of oil in a pan over medium-low heat. Carefully place the filled hotteoks into the hot oil. Cook for about 3-4 minutes per side, pressing down gently with a spatula, until golden brown and crispy on both sides. Serve immediately and enjoy the delightful spicy and savory flavors!
