  • 3 servings cooked rice
  • 500g soft tofu (sundubu)
  • 1 cup or more aged kimchi (remove filling or rinse before using)
  • 1 stalk green onion
  • 1 onion
  • 3 fried eggs

Heat a deep pan or pot over low heat and add 1-2 tablespoons of cooking oil. Add the minced garlic and the finely chopped white and light green parts of the green onion. Sauté until fragrant oil is extracted, being careful not to burn the garlic.

If your kimchi has a lot of filling, gently scrape some out. If it’s too sour, you can lightly rinse it under water, squeeze out the excess moisture, and then finely chop it. Add the chopped kimchi to the pan and stir-fry over medium heat until it becomes translucent and tender. If you rinsed the kimchi, add 1/2 tablespoon of red pepper flakes now to enhance the color and spiciness.

Once the kimchi is well-fried, add the thinly sliced onion and sauté until the onion becomes translucent. The sweetness of the onion will further enhance the savory flavor of the kimchi.

For an added depth of flavor, stir in 1 teaspoon of oyster sauce and stir-fry for another moment to combine all ingredients well. The unique umami from the oyster sauce will elevate the dish.
