Spicy & Numbing Mala Tang Udon
A Simple & Delicious Udon Dish with Mala Sauce: Enjoy Mala Tang Udon with Fish Cakes!
I made this Mala Udon easily with Mala Tang sauce, and it was incredibly delicious! Adding fish cakes and spring greens makes it satisfying and fragrant. The zesty, spicy flavor is utterly addictive.
Main Ingredients- 1 serving Udon noodles
- 1 sheet Square fish cake
- 3 leaves Spring greens (e.g., Crown daisy or Bok choy)
- 1/3 Onion
- 1/3 Green onion
- 500ml Kelp broth
- 1 Tbsp Minced garlic
- Pinch of black pepper
- 1.5 Tbsp Cooking oil
Spicy Mala Sauce- 1 Tbsp Chinese soy sauce
- 0.5 Tbsp Oyster sauce
- 1.5 Tbsp Mala Tang sauce (pre-made)
- 0.5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Chinese soy sauce
- 0.5 Tbsp Oyster sauce

Cooking Instructions
Step 1
Prepare all your ingredients first. Slice the onion thinly, chop the spring greens into bite-sized pieces, and finely mince the green onion.
Step 2
Have your 500ml of kelp broth ready. If you don’t have kelp broth, you can use anchovy broth or any other pre-made broth.
Step 3
Now, let’s make the special Mala sauce that’s the heart of this dish! In a bowl, combine 1 Tbsp Chinese soy sauce, 0.5 Tbsp oyster sauce, 1.5 Tbsp Mala Tang sauce, 0.5 Tbsp Gochujang, and 1 Tbsp Gochugaru. Mix thoroughly with a spoon until well combined and smooth. Making this sauce ahead of time will make the cooking process much easier.
Step 4
Heat about 1.5 Tbsp of cooking oil in a pan over medium-low heat. Add the minced green onion and minced garlic. Stir-fry until fragrant, being careful not to burn the garlic, to release its aromatic flavor.
Step 5
Pour the 500ml of kelp broth into the pan with the fragrant garlic and green onion. Add the sliced onion, chopped spring greens, and the fish cake. Finally, add all the prepared Mala sauce. Give everything a gentle stir to combine.
Step 6
Bring the broth to a boil over medium heat and let it simmer for about 3 minutes until it bubbles gently. This allows the flavors of the vegetables and fish cake to meld into the broth.
Step 7
Once the broth is boiling, add the udon noodles. Use chopsticks to gently loosen the noodles so they don’t stick together, and continue to cook for about 2 more minutes until the noodles are heated through and softened. The broth will thicken slightly as the noodles cook.
Step 8
Add a pinch of black pepper to enhance the aroma and flavor. Adjust the amount to your preference.
