Main Ingredients
  • 500g bean sprouts
  • 150g pork (shoulder or loin recommended)
  • 1/2 onion
  • 2 Korean green chilies (or jalapeños)
  • 1 red chili
  • A small bunch of green onions

Seasoning
  • 1 Tbsp soy sauce (or seasoned soy sauce)
  • 1 Tbsp cooking wine (like mirin)
  • 1 Tbsp oyster sauce
  • Salt (to taste)
  • Pinch of black pepper
  • Sesame seeds (for garnish)

Cooking Instructions

Step 1

First, wash the bean sprouts thoroughly under running water. Trim off any dirty root ends. Place the washed bean sprouts in a pot with 0.5 cup of water (use a standard Korean paper cup as a measure). Cover the pot and bring to a boil. Once boiling, cook for approximately 3 minutes and 30 seconds over high heat. Be careful not to overcook, as this will make the sprouts mushy – timing is crucial!

Step 2

Once blanched, immediately drain the bean sprouts in a colander. Allowing the steam to escape quickly helps preserve their crisp texture.

Step 3

Do not rinse the bean sprouts. Let them cool down slightly in the colander. This step helps to retain their refreshing taste and satisfying crunch.

Step 4

While the bean sprouts are cooling, prepare the other vegetables. Slice the onion thinly into strips. Remove the seeds from the green and red chilies and slice them thinly. Chop the green onions diagonally.

Step 5

Now, let’s stir-fry! Heat a pan over high heat until very hot. Add the pork and sear it on both sides until lightly browned. Pour in 1 Tbsp of cooking wine and a pinch of salt to remove any porky odors and continue to cook. Add the sliced onions and stir-fry until they become slightly translucent. If you’re adding garlic, this is the time to stir in 1 Tbsp of minced garlic and mix everything well to cook the pork and onions thoroughly.

Step 6

Add the cooled bean sprouts, sliced chilies, and the seasoning ingredients (1 Tbsp soy sauce, 1 Tbsp oyster sauce) to the pan. Stir-fry quickly over high heat, combining everything. It’s important to toss gently to avoid breaking the bean sprouts. Taste and adjust the seasoning with salt if needed.

Step 7

Just before turning off the heat, sprinkle with a pinch of black pepper and sesame seeds. This adds a wonderful aroma and completes the dish.
