Stew Ingredients
  • 6 potatoes (medium-sized)
  • 1/2 onion
  • 2 strips pork belly (about 200g)
  • 1 stalk green onion
  • 500ml water

Spicy Seasoning Paste
  • 2 Tbsp Gochujang (Korean chili paste, heaping)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp minced garlic
  • 2 Tbsp Fish Sauce (tuna or anchovy)
  • 1 Tbsp Soy Sauce (for soup)
  • 1/2 Tbsp sugar

Cooking Instructions

Step 1

First, prepare the potatoes, a key ingredient for this stew. Wash them thoroughly, peel, and cut into roughly 2-3cm chunks, about 6 pieces per potato. This size ensures they cook through without becoming mushy.

Step 2

Next, prepare the green onion. Wash it well and slice it diagonally at an angle, about 0.5cm thick. Slicing it this way allows its subtle aroma to infuse the stew while maintaining a pleasant texture.

Step 3

Cut the pork belly into bite-sized pieces, about 3-4cm in length. This will provide a rich, savory flavor and juicy texture to your stew.

Step 4

Now, let’s make the flavor-packed seasoning paste. In a bowl, combine 2 heaping tablespoons of gochujang, 1 tablespoon of gochugaru, 1 tablespoon of minced garlic, 2 tablespoons of fish sauce (tuna or anchovy will work), 1 tablespoon of soup soy sauce, and 1/2 tablespoon of sugar. Mix everything well until you have a smooth, thick paste. Thorough mixing ensures the stew’s flavor is consistent.

Step 5

Heat a deep pot over medium heat. Add the sliced pork belly and stir-fry until it renders its delicious fat. Once the fat has rendered, add the prepared gochujang paste. Stir well to coat the pork and cook for 1-2 minutes over medium-low heat. This step helps the flavors meld beautifully.

Step 6

Pour in 500ml of water into the pot with the pork and paste. Bring it to a rolling boil over high heat. Once boiling, add the prepared potatoes and onion. Reduce the heat to medium-low, cover the pot, and let it simmer gently for about 10-15 minutes, or until the potatoes are tender. Simmering allows the ingredients to fully absorb the broth’s rich flavors.

Step 7
