Spicy Pork and Gochujang Stew: The Ultimate Comfort Food
A Hearty and Flavorful Pork Gochujang Stew Recipe
Wondering what to make for dinner tonight? I found some pork and tofu in the fridge and remembered this comforting stew I used to make often. It’s a favorite of mine, and it’s been a while since I last cooked it! This rich and spicy stew is perfect for a satisfying meal.
Main Ingredients
- 200g Pork Shoulder (cut into bite-sized pieces)
- 1 block Tofu (cubed)
- 1/2 Onion (sliced)
- A handful of Green Onions (chopped)
Seasoning Ingredients
- 1 Tbsp Minced Garlic
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1.5 Tbsp Salt (adjust to taste)
- Pinch of Black Pepper (optional, to taste)
- A little Grapeseed Oil (for sautéing)
- 1 Tbsp Minced Garlic
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 1.5 Tbsp Salt (adjust to taste)
- Pinch of Black Pepper (optional, to taste)
- A little Grapeseed Oil (for sautéing)
Cooking Instructions
Step 1
Heat a little grapeseed oil in a pot over medium heat. Add the prepared pork shoulder and sauté until the surface is lightly browned.
Step 2
Once the pork is partially cooked, add 1 Tbsp of minced garlic and 1 Tbsp of gochujang. Continue to stir-fry with the pork. Sautéing the seasonings with the meat at this stage helps to infuse more flavor.
Step 3
Add the sliced onion to the same pot where you sautéed the pork. Cooking the onions with the meat adds sweetness and depth to the stew.
Step 4
Continue to sauté until the onions become translucent and release their sweet aroma, about 2-3 minutes. Be careful not to burn them.
Step 5
Pour in 3 cups (about 600ml) of water to the sautéed ingredients. Using rice water instead of plain water will make the broth richer and more flavorful.
Step 6
Once the water comes to a boil, add the cubed tofu and the remaining 1 Tbsp of gochujang, along with 2 Tbsp of gochugaru. Stir well to dissolve. Let the stew simmer vigorously for 5-7 minutes over low heat. Finally, season with salt to taste, and add a pinch of black pepper if desired.
Step 7
Ladle the finished spicy and delicious pork gochujang stew into warm bowls for a hearty and satisfying dinner.
