Ingredients- Pork belly or shoulder 300g
- Well-fermented kimchi (aged kimchi) 1/4 head
- Green onion 1 stalk
- Minced garlic 2 tsp
- Gochugaru (Korean chili flakes) 2 tsp
- Soy sauce 2 tsp
- Sugar 1 tsp
- Radish 1/4 medium
- Broth (anchovy-kelp broth or rice water) 300ml

First, let’s gather the ingredients for our Kimchi Stew. Prepare the right amount of ingredients to ensure a fresh and delicious stew.

Prepare about 1/4 of a head of well-fermented kimchi. Gently shake off excess kimchi juice, then carefully roll pieces of pork within the kimchi leaves. Wrapping the pork in kimchi allows the juices to meld with the kimchi as it cooks, creating a deeper flavor, and also makes it much easier to eat. Remember, you can adjust the seasoning based on how sour your kimchi is.

After rolling the pork inside the kimchi, slice the radish into half-moon shapes and place them at the bottom of your pot. Then, arrange the rolled kimchi and pork pieces attractively on top of the radish. The radish helps to make the broth refreshing and prevents the kimchi and pork from sticking to the bottom.
