Spicy Pork Belly and Squid Stir-fry: A Rice Thief!

This is a recipe for a wonderfully saucy squid stir-fry that my husband absolutely loves. This time, I found myself a bit short on squid, so I decided to add some pork belly to make it more like ‘Osam Bulgogi’ (pork belly and squid stir-fry). He ended up loving it even more, haha!

Main Ingredients

  • 1 Squid (cleaned and prepared)
  • 1.5 strips Pork Belly (about 150g)
  • A small amount of Carrot (thinly julienned)
  • 1/4 stalk Green Onion (sliced diagonally)
  • 1/2 Onion (1/4 finely grated, 1/4 thinly sliced)

Cooking Instructions

Step 1

First, prepare the onion that will add depth to the sauce. Finely grate 1/4 of the onion using a blender or grater. Grating it this way makes the sauce smoother and more delicious.

Now, let’s make the flavorful sauce! In a bowl, combine the grated 1/4 onion, 1 Tbsp minced garlic, 3 Tbsp gochujang, 2 Tbsp gochugaru, 2 Tbsp soy sauce, 1.5 Tbsp oligodang, 1 Tbsp sugar, 1 Tbsp mirin, and 0.5 tsp black pepper. Mix well to create the sauce.

Instead of using the sauce immediately, let it rest for about 10 to 30 minutes. This allows the flavors to meld together, creating a richer taste. You can store it in the refrigerator during this time.

Heat your pan and add about 1.5 strips of pork belly, cut into bite-sized pieces. Since pork belly is quite fatty, you don’t need to add any cooking oil. In fact, cooking it without extra oil renders out more fat, making it tastier and less greasy.

Once the pork belly is slightly cooked, add the thinly julienned carrots and diagonally sliced green onions. Pour in all the prepared sauce and stir-fry over medium heat.

Continue to stir and cook until the pork belly is about 70% done. This ensures that the sauce evenly coats the ingredients and the flavors meld beautifully.

When the pork belly is sufficiently cooked, add the prepared squid (cut into bite-sized pieces) to the pan. It’s important not to overcook the squid, as it can become tough.

Now, add the thinly sliced 1/4 onion and stir-fry for about 1 minute, just until the squid starts to cook. You want the onion to retain a slight crispness.

Finally, add 100ml of water and bring it to a simmer until the sauce thickens slightly. Just before you turn off the heat, drizzle in 1 Tbsp of sesame oil and give it a good stir. Your delicious pork belly and squid stir-fry is ready!

Transfer the completed stir-fry to a serving dish and sprinkle with sesame seeds. Enjoy the fantastic combination of moist sauce, chewy squid, and savory pork belly!
