Inspired by the famous spicy stir-fried chicken feet restaurant ‘Hongmi Dakbal’ in Nonhyeon-dong, this recipe brings their signature spicy pork bone stir-fry right into your kitchen. While the original branch is in Gangseo-gu, this dish is known for its addictively fiery and tingling taste that keeps you coming back for more. Many might assume their signature dish is chicken feet, but surprisingly, their braised chicken stew (Dakbokkeumtang) is the true original star! Once you fall for its charm, you’ll be captivated by the Dakbokkeumtang more than the chicken feet.
Topped generously with Cheongyang chili peppers, these add a delightful kick, but beware – they pack a serious punch!
While spicy chicken feet are delicious, the pork bone stir-fry is equally irresistible. Craving that unique texture, I ordered pork bones online and recreated the dish using minced chicken breast for added tenderness. I used a store-bought sauce as a base, then amplified the heat with Capsaicin and smoky chili oil for an intensely addictive spicy flavor. This stir-fry is perfect with rice, especially when transformed into rice balls, which make the perfect companion. Let’s get started on this mouthwatering Odorupyeo Bokkeum!

- 4 Tbsp Chopped green onions
- 1 tsp Grated ginger
- 2 Onions
- 2 Cheongyang chili peppers (adjust to spice preference)
- 2 Tbsp Cooking wine (or Mirin)
- 1 Tbsp Black pepper
- 2 Tbsp Plum extract (or honey)
- 1 Tbsp Capsaicin sauce (optional, for extra heat)
- 2 Tbsp Smoky chili oil (chili oil with a smoked flavor)
- 1 cup Store-bought spicy chicken feet sauce (or a spicy gochujang-based sauce)

- 2 bowls Cooked rice (warm)
- 3 Tbsp Seasoned seaweed flakes (or crumbled roasted seaweed)
- 1 tsp Sesame oil
- 1 tsp Toasted sesame seeds
- 2 cups Cooked pork bone stir-fry
- 2 bowls Cooked rice (warm)
- 3 Tbsp Seasoned seaweed flakes (or crumbled roasted seaweed)
- 1 tsp Sesame oil
- 1 tsp Toasted sesame seeds
Cooking Instructions
Step 1
First, let’s prepare the vegetables that will add flavor to the pork bone stir-fry. Finely mince the onions to add savory depth to the dish, and chop the Cheongyang chili peppers for a spicy kick. Mince the onions as finely as possible. Tip: Finely minced onions blend better into the sauce when stir-fried, ensuring even flavor distribution.
Step 2
In a bowl, combine the minced onion with minced garlic, grated ginger, and chopped green onions. Mix well to allow the pungent aromas of garlic and ginger to meld together.
Step 3
Next, add 2 tablespoons of smoky chili oil. This chili oil will impart a deep flavor to the pork bone stir-fry. To eliminate any gamey odors, add 1 tablespoon of black pepper. For a touch of sweetness, add 2 tablespoons of plum extract. Mix thoroughly to create the sauce base.
Step 4
Prepare the main ingredient: 1kg of pork bones. Before cooking, chop the pork bones into small pieces. However, chopping them finely at home with a knife can be challenging. Chop them as small as possible initially, and then during the stir-frying process, use kitchen scissors to cut them further into bite-sized pieces. This method allows for a pleasant chewiness while maintaining a manageable size.
Step 5
Since pork bones alone might not have enough meat, we’ll add minced chicken breast for extra tenderness and succulence. Prepare the store-bought minced chicken breast.
Step 6
Add the prepared minced chicken breast to the bowl, ready to be mixed with the other ingredients and marinade.
Step 7
Add the pork bones, which have been pre-chopped, to the bowl with the minced chicken breast. Gently massage the mixture with your hands to ensure the marinade coats all the ingredients evenly. Make sure everything is well combined with the sauce.
Step 8
Now, add 1 cup of the store-bought spicy chicken feet sauce, which is key to the flavor profile. This sauce will be responsible for the spicy kick of the pork bone stir-fry. Tip: Adjust the amount of sauce based on its saltiness and spiciness.
Step 9
If you desire an even spicier flavor, add 1 tablespoon of capsaicin sauce. (If you prefer milder heat, omit this or reduce the amount.) After adding all the ingredients, mix and marinate by gently massaging the mixture with your hands until the sauce is evenly distributed. The preparation and marinating are now complete!
Step 10
Marinate the pork bones in the refrigerator for about half a day to allow the flavors to penetrate deeply. Now, heat a pan over medium-high heat and add a swirl of smoky chili oil. Add the marinated pork bones and minced chicken breast and begin to stir-fry. As the pork bones cook, use kitchen scissors to cut them into smaller, bite-sized pieces. This technique ensures a pleasant chewiness alongside tenderness.
Step 11
As it stir-fries, a mouthwatering spicy aroma will fill the air! Continue to stir and cook until the pork bones and chicken are completely cooked through. Behold, the delicious spicy pork bone stir-fry is ready! While it’s delicious on its own, the true highlight of this dish is its perfect harmony with rice balls.
Step 12
Transfer the finished pork bone stir-fry to a serving plate. Garnish with a sprinkle of toasted sesame seeds on top. We’ll add sesame oil when making the rice balls, so don’t add it here.
Step 13
Now, let’s transform this delectable pork bone stir-fry into flavorful rice balls. Place 2 bowls of warm cooked rice into a large mixing bowl.
Step 14
Add 1 teaspoon of sesame oil and 1 teaspoon of toasted sesame seeds to the rice for a nutty aroma.
Step 15
Next, add 3 tablespoons of seasoned seaweed flakes (or crumbled roasted seaweed) for extra flavor. Mix the rice with all the ingredients until well combined. Now, put on disposable gloves and shape the mixture into bite-sized balls. Tip: If the rice is too sticky, mix in some cold rice or let the cooked rice cool slightly before shaping.
Step 16
The spicy and savory pork bone stir-fry and its perfect companion, the Odorupyeo rice balls, are complete! Because of the rice, the rice balls might not seem as spicy as the stir-fry itself. The nutty sesame oil helps to balance the heat. The crunchy texture of the pork bones is truly delightful. In fact, making it at home allows you to fully appreciate the chewy texture of the pork bones more than dining out. This is a stress-relieving dish that you absolutely must try!
