  • 1 King Oyster Mushroom (for a chewy texture)
  • 1/2 Scallion (for aromatic flavor)
  • 4 Dried Chili Peppers (adjust to taste for spiciness)
  • 1 Egg (for a soft poached egg topping)
  • Olive Oil (for stir-frying)

Cooking Instructions

Step 1

1. Prepare the delicious sauce and ingredients.
– Mix 2 Tbsp soy sauce, 1 Tbsp oyster sauce, 1 tsp minced garlic, and a pinch of black pepper in a bowl to create the ‘Bulgogi Sauce’.
– Marinate the pork bulgogi cutlets with about 1 Tbsp of the prepared bulgogi sauce. Let it sit for about 10 minutes for better flavor.
– Wash and prepare the vegetables. Thinly slice the onion and carrot. Slice the scallion diagonally. Stack and thinly slice the perilla leaves. Trim the base of the king oyster mushroom and separate it into strands.

Step 1

Step 2

2. Sauté the scallions to release their aroma.
– Heat 1-2 Tbsp of olive oil in a pan over medium-low heat. Add the sliced scallions and sauté slowly until fragrant, creating a flavorful scallion oil. Be careful not to burn them.

Step 2

Step 3

3. Stir-fry the crisp vegetables.
– Once the scallions are fragrant, add the sliced onion and carrot to the pan and stir-fry together until they begin to soften and turn translucent. It’s best to cook over medium heat to prevent burning.

Step 3

Step 4

4. Add the marinated pork.
– When the vegetables are partially cooked, add the marinated pork to the pan. Break up any clumps with chopsticks or a spatula and stir-fry until the pork is no longer pink.

Step 4

Step 5

5. Cook the pork thoroughly.
– Continue to stir-fry the pork until it is fully cooked through and no pink remains. The juices released from the pork will blend with the vegetables, enhancing the overall flavor.

Step 5

Step 6

6. Add mushrooms, noodles, and sauce.
– Add the king oyster mushroom strands and dried chili peppers (for a bit of heat) to the pan and stir-fry briefly. Then, add the cooked udon noodles. Add 2-3 Tbsp of the prepared bulgogi sauce and stir-fry to coat the noodles and ingredients evenly. Adjust the sauce amount to your preference.

Step 6

Step 7

7. Finish with fresh perilla leaves.
– Once the udon noodles are cooked and well-coated with the sauce, turn off the heat. Add half of the sliced perilla leaves (about 2-3 leaves) and toss gently with the residual heat of the pan. The fresh aroma of the perilla leaves will add a wonderful touch. Adding them at the end keeps them from becoming too soft and retains their crispness.

Step 7

Step 8

8. Your delicious stir-fry is ready! Present it beautifully.
– Transfer the stir-fried noodles to a plate for an appealing presentation. Your delicious Pork Bulgogi Udon Stir-Fry is complete!

Step 8

Step 9

9. Easy Poached Egg Tip!
– For a special touch, try making a poached egg. In a microwave-safe bowl, add 2 Tbsp of water. Make 5-8 small holes in the egg yolk with a toothpick, then gently place the egg in the water. Microwave for about 50 seconds until the yolk is perfectly runny. (Microwave times may vary.)

Step 9

Step 10

10. Enjoy your delicious meal!
– Top the stir-fry with the remaining sliced perilla leaves and carefully place the warm poached egg in the center. Break the yolk and mix it into the noodles for an incredibly flavorful bite!
