Main Ingredients

  • Pork shoulder (front leg) 600g
  • Firm Tofu 1 block (400g)
  • Water 600cc

Seasoning and Aromatics

  • Gochujang (Korean chili paste) 1 Tbsp (using a standard Korean soup spoon)
  • Doenjang (Korean soybean paste) 0.5 Tbsp (using a standard Korean soup spoon)
  • Gochugaru (Korean chili flakes) 3 Tbsp (using a standard Korean soup spoon)
  • Mirin (rice wine) 6 Tbsp (using a standard Korean soup spoon)
  • Fish sauce (anchovy) 2 Tbsp (using a standard Korean soup spoon)
  • Sugar 2 Tbsp (using a standard Korean soup spoon)
  • Oyster sauce 1 Tbsp (using a standard Korean soup spoon)
  • Aged Kimchi 1 bowl (chopped to bite-size)
  • Minced Garlic 2 Tbsp (using a standard Korean soup spoon)
  • Black Pepper a pinch
  • Onion 1/2 (thinly sliced)
  • Cheongyang Pepper (Korean chili pepper) 1 (finely chopped)

Cooking Instructions

For this recipe, ‘Tbsp’ refers to a standard Korean soup spoon, approximately 8cc. First, in a large bowl, combine all ingredients except for the water and tofu. This includes the pork, all seasoning ingredients, kimchi, onion, and chili pepper. Thinly slice the onion and finely chop the Cheongyang pepper. Mix all the ingredients in the bowl thoroughly to create a well-combined seasoning paste.

Heat a pan over medium heat. Add all the prepared ingredients to the pan and stir-fry until the pork is about 80% cooked. If it’s hard to tell the doneness by color, increase the heat to high and stir-fry vigorously for about 2 minutes to ensure even cooking.

Once the ingredients are about 80% cooked, pour in 600cc of water and bring it to a rolling boil over high heat. As soon as it starts to boil vigorously, add the tofu pieces.

After adding the tofu, let it simmer for about 5 to 10 minutes. For my preference, I simmer it on high heat for 5 minutes, then taste and continue simmering for another 5 minutes until it reaches the desired flavor and consistency. (Since stove power varies by household, tasting and adjusting is crucial.) Once the broth has reduced to your liking, add 2-3 pinches of black pepper for extra flavor. Black pepper complements pork stews beautifully by cutting through richness and enhancing the overall aroma.
