Main Ingredients- 4kg Pork ribs
- A little carrot (for garnish or texture)
- 6-7 Shiitake mushrooms
- 3 Korean chili peppers (adjust spiciness)
- A pinch of sesame seeds (for topping)
Spicy Pork Ribs Marinade- 200ml Soy sauce
- 200ml Water
- 3 Tbsp Minced garlic
- 1 Tbsp Ginger juice
- 100ml Cooking wine (like mirin)
- 2 Tbsp Oyster sauce
- 30g Dried chili flakes (adjust to taste, can substitute with dried red chilies or chili powder)
- A pinch of Black pepper
- 2 Green onions (white parts)
- 100ml Plum extract (or plum juice)
- 200ml Soy sauce
- 200ml Water
- 3 Tbsp Minced garlic
- 1 Tbsp Ginger juice
- 100ml Cooking wine (like mirin)
- 2 Tbsp Oyster sauce
- 30g Dried chili flakes (adjust to taste, can substitute with dried red chilies or chili powder)
- A pinch of Black pepper
- 2 Green onions (white parts)
- 100ml Plum extract (or plum juice)
Cooking Instructions
Step 1
Prepare 4kg of fresh pork ribs. Soaking the pork ribs in water for 6-8 hours is the key to removing any gamey smell and ensuring the meat is tender. Place the ribs in cold water and change the water frequently to drain the blood. While soaking, gently knead the ribs with your hands periodically to help release more blood.
Step 2
Make the delicious marinade for the pork ribs. In a large bowl, combine 200ml soy sauce, 200ml water, 3 Tbsp minced garlic, 100ml plum extract, 1 Tbsp ginger juice, 100ml cooking wine, 2 Tbsp oyster sauce, 30g dried chili flakes (increase or decrease amount according to your preference for spiciness), and a pinch of black pepper. Mix well. Chop the white parts of the green onions into large pieces and add them to enhance the marinade’s flavor.
Step 3
Add the prepared pork ribs to the marinade and mix well. Add the sliced carrots and shiitake mushrooms with slits cut into them to add aroma. Finely chop the Korean chili peppers to add a spicy kick. Mix all ingredients thoroughly with the marinade, then cover with plastic wrap and let it marinate in the refrigerator for about a day. This allows the flavors to meld, resulting in a deeper taste.
Step 4
Take the marinated pork ribs out of the refrigerator and place them in a pot. Bring to a boil over high heat for about 10 minutes, allowing the sauce to adhere to the meat. Then, reduce the heat to medium-low and simmer gently for 20-30 minutes until the ribs are tender. Cook slowly until the meat is tender. If the sauce reduces too much during cooking, you can add a little more water.
Step 5
Arrange the well-cooked spicy pork ribs attractively on a serving dish. Sprinkle with toasted sesame seeds for a final touch of flavor and visual appeal. Your tender and spicy pork ribs, where the meat easily falls off the bone, are now ready! Enjoy with a warm bowl of rice.
