Main Ingredients- Pork Belly 400g (cut into bite-sized pieces)
- Onion 1 medium (thinly sliced)
- Scallions 1/2 (white parts thinly sliced, green parts diagonally sliced)
Spicy & Sweet Sauce- Gochugaru (Korean chili flakes) 2 Tbsp
- Soy Sauce (regular) 2 Tbsp
- Sugar 1 Tbsp
- Gochujang (Korean chili paste) 1 Tbsp
- Yeondoo or Mat-sunsaeng (Korean seasoned soy sauce or all-purpose seasoning) 1 Tbsp
- Minced Garlic 1 Tbsp
- Cooking Wine (Cheongju or Soju) 1 Tbsp
- Ground Black Pepper 2 tsp
- Gochugaru (Korean chili flakes) 2 Tbsp
- Soy Sauce (regular) 2 Tbsp
- Sugar 1 Tbsp
- Gochujang (Korean chili paste) 1 Tbsp
- Yeondoo or Mat-sunsaeng (Korean seasoned soy sauce or all-purpose seasoning) 1 Tbsp
- Minced Garlic 1 Tbsp
- Cooking Wine (Cheongju or Soju) 1 Tbsp
- Ground Black Pepper 2 tsp
Cooking Instructions
Step 1
First, prepare 400g of fresh pork belly. Using a knife or scissors, cut it into bite-sized pieces, about 2-3 cm in size. Aim for pieces that are not too small, so you can enjoy the texture.
Step 2
Thinly slice the white parts of the scallions into approximately 0.5 cm rounds. These will add a subtle sweetness and absorb the sauce beautifully.
Step 3
Cut the green parts of the scallions diagonally into slightly larger pieces, about 1 cm wide. These will be added towards the end for freshness and color.
Step 4
Peel and wash the onion, then slice it thinly into about 0.5 cm thickness. The onion will soften as it cooks, adding sweetness and mingling with the sauce.

Now, let’s start stir-frying! Heat a frying pan over medium heat. Add the cut pork belly and stir-fry until it starts to turn golden brown. Add the ground black pepper (2 tsp) and sugar (1 Tbsp) while cooking. The sugar helps tenderize the meat and remove any gaminess.
Step 6
Once the pork belly is about 80% cooked and has rendered some of its fat, add the thinly sliced white parts of the scallions. Stir-fry them together with the pork. The aroma of the scallions will meld with the meat, creating a delicious depth of flavor.
Step 7
It’s time to add the flavorful sauce! First, add the gochugaru (2 Tbsp) and stir-fry it with the meat and scallions for a moment. This step helps to toast the chili flakes, enhancing their flavor and color without any bitterness. Next, add the soy sauce (2 Tbsp). The remaining sauce ingredients (gochujang 1 Tbsp, Yeondoo/Mat-sunsaeng 1 Tbsp, minced garlic 1 Tbsp, and cooking wine 1 Tbsp) can be added in any order. Mix everything well and continue to stir-fry.
Step 8
After stir-frying the sauce for a short while, immediately add the thinly sliced onions. The onions will caramelize slightly as they cook, adding a natural sweetness that balances the spiciness of the dish.
Step 9
When the onions become translucent and the pork is almost fully cooked, add the diagonally sliced green parts of the scallions. Stir-fry for just about 10 seconds more. This ensures the green parts remain vibrant and slightly crisp, adding a fresh counterpoint to the dish.
