Main Ingredients- 250g Bean Sprouts
- 3 Tbsp Scallions (chopped)
Seasoning- 1 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Fish Sauce (or Soy Sauce)
- 0.1 tsp Fine Salt (adjust to taste)
- 0.5 tsp Minced Garlic
- 1 Tbsp Toasted Sesame Seeds (ground)
- 1 Tbsp Sesame Oil
- 1 Tbsp Gochugaru (Korean chili powder)
- 1 Tbsp Fish Sauce (or Soy Sauce)
- 0.1 tsp Fine Salt (adjust to taste)
- 0.5 tsp Minced Garlic
- 1 Tbsp Toasted Sesame Seeds (ground)
- 1 Tbsp Sesame Oil

Step 1

The key to perfectly seasoned bean sprouts is blanching them until they are crisp and free of any raw smell. Let’s get started!

Even with plenty of ingredients in the fridge, sometimes bean sprouts are just what you crave. Rinse the bean sprouts under running water about three times to remove any dirt or debris. Drain them thoroughly in a colander. Make sure to wash them until the water runs clear.

Pour enough water into a pot to cover the bean sprouts and bring it to a boil over high heat. Once the water is boiling rapidly, add 0.5 Tbsp of coarse salt, then add the rinsed bean sprouts. After adding the sprouts, keep the lid off and blanch them for 3-4 minutes, gently flipping them occasionally. The best way to check for doneness is to taste one; it should be crisp. Keeping the lid open prevents the sprouts from developing a raw smell.

Immediately after blanching, plunge the bean sprouts into cold water to cool them down quickly. This step is crucial for maintaining their crisp texture. Once cooled, drain the bean sprouts thoroughly in a colander. Excess water can dilute the seasoning, so ensure they are well-drained.

To the drained bean sprouts, add 1 Tbsp of gochugaru for a spicy kick and 1 Tbsp of fish sauce for added umami. If you don’t have fish sauce, soy sauce can be used as a substitute.
