Spicy Rice Cake Ramen (Tteok Ramen)
Elevate Your Ramen! A Delicious Tteok Ramen Recipe with a Secret Tip: Fish Sauce for Enhanced Flavor
This recipe shows you how to make delicious ramen by adding chewy rice cakes (tteok). Perfect for a comforting and flavorful meal.
Ingredients- 1 pack Ramen noodles
- 1 Egg
- 500ml Water (approx. 2.5 cups)
- 1 handful Tteokguk rice cakes (about 50g)
- 0.5 Tbsp Gochugaru (Korean chili powder)
- 0.5 Tbsp Fish sauce
Cooking Instructions
Step 1
If your tteokguk rice cakes are frozen, soak a handful in water to soften them before starting. This prevents them from sticking together and ensures a tender, chewy texture when cooked.
Step 2
Crack one egg into a bowl and gently whisk it until the yolk and white are well combined. Pre-whisking the egg helps it cook evenly and beautifully in the ramen.
Step 3
In a pot, bring 500ml of water to a rolling boil over high heat. Once boiling, add the ramen soup base and stir to dissolve.
Step 4
When the water is boiling vigorously, add the softened tteokguk rice cakes. Give it a gentle stir to prevent them from sticking to the bottom.
Step 5
Add half a tablespoon of gochugaru for a spicy kick and deeper flavor to the broth. You can adjust this amount to your spice preference.
Step 6
Once the rice cakes are almost cooked and tender (about 2-3 minutes), add the ramen noodles. Cooking them together allows the chewy texture of the rice cakes to meld perfectly with the noodles.
Step 7
Cook the ramen noodles according to the package directions or to your desired level of doneness. Be careful not to overcook, or the noodles may become too soft.
Step 8
Here’s the secret tip for enhanced flavor! Add half a tablespoon of fish sauce to the broth. Fish sauce adds a wonderful umami depth, making the ramen broth incredibly savory and complex. Adding it at this stage is key!
Step 9
Once the noodles are cooked, carefully lift them out of the pot with chopsticks and place them in your serving bowl. Removing the noodles first helps keep the broth clearer and allows the egg to cook nicely.
Step 10
Gently pour the whisked egg mixture over the broth in the pot.
Step 11
Do not stir the egg after pouring it in! Reduce the heat to low and let it cook undisturbed until the egg is set and floats to the surface. This creates delicate ribbons of cooked egg rather than scrambled pieces.
Step 12
Once the egg is cooked in the broth, carefully ladle the hot broth and egg mixture over the noodles in the bowl. Pour gently so the egg sits prettily on top.
Step 13
Your delicious Tteok Ramen, featuring chewy rice cakes and a rich, spicy broth, is ready to enjoy!
