Easy Recipe for Spicy Gochujang Chive Pancakes
This Gochujang Buchu Jangtteok is a delightful twist on the traditional chive pancake, featuring the bold, spicy-sweet flavor of Korean chili paste. The combination of fragrant chives and crisp vegetables, enhanced by gochujang, creates a uniquely chewy and crispy texture that pairs wonderfully with makgeolli (Korean rice wine). Main Ingredients- 2 handfuls of chives (approx. 150g)
- 1/2 zucchini (small)
- 1 onion (medium)
Cooking Instructions
Step 1
First, wash the fresh chives thoroughly and pat them dry. Then, chop them into approximately 3-4 cm lengths. Cutting them too long might make them difficult to cook evenly in the pancake.
Step 2
Peel the onion and slice it thinly into strips. Slicing them thinly will help them separate naturally during cooking and mix well with the batter.
Step 3
Wash the zucchini well and then slice it into long, thin strips, similar in thickness to the onion. You can remove the seeds if you prefer.

In a small bowl, add 1 tablespoon of gochujang. Pour in a little water (about 3-4 tablespoons) and mix well until the gochujang is smoothly dissolved without lumps. This will form your flavorful gochujang base.
Step 5
In a larger bowl, combine the prepared chives, onion, and zucchini. Pour the gochujang base over the vegetables and gently mix with your hands. This helps the gochujang flavor coat the vegetables evenly.
Step 6
Sprinkle the pancake mix and tempura flour over the vegetables. Mix everything together by hand, gently folding and combining. The moisture from the vegetables and the gochujang base will start to form a batter. If it seems too thick, gradually add a little more water until you reach a consistency where the ingredients are well coated and the batter flows slightly, but still holds its shape. It should be a pourable batter that still has texture.
Step 7
Heat a generous amount of cooking oil in a frying pan over medium heat. Spoon portions of the batter into the hot oil and fry until golden brown and crispy on both sides. Ensure they are cooked through. Using enough oil at the right temperature will help achieve a perfectly crispy texture without absorbing too much grease.
