Main Ingredients
- 2 bowls of warm cooked rice
- 1 cup well-fermented kimchi, finely chopped (lightly squeezed of excess juice)
- 4 Tbsp seaweed flakes (kim)
- Pinch of salt (adjust according to kimchi’s saltiness)

- 1 Tbsp toasted sesame seeds
- 1 tsp honey (or sugar)

Cooking Instructions
Step 1
Finely chop the kimchi, but don’t squeeze out all the juice; a little moisture will add flavor and help bind the rice balls. Place the chopped kimchi into a mixing bowl.
Step 2
Add 4 Tbsp seaweed flakes, 1 Tbsp toasted sesame seeds, 1 tsp honey (you can adjust sweetness to your liking), and 1 Tbsp sesame oil to the bowl with the kimchi. Then, add 2 bowls of warm cooked rice and a tiny pinch of salt (optional, depending on the kimchi’s saltiness) to enhance the flavor. Gently mix everything together with your hands until well combined. Be careful not to mash the rice grains; a gentle touch is key.
Step 3
Take portions of the well-mixed rice and shape them into round balls. These are great as a snack for kids or as a lunchbox item. For extra flair, you can garnish the finished rice balls with more seaweed flakes or sesame seeds.
