For those who adore spicy seafood stews, I’m thrilled to introduce Chef Baek Jong-won’s Sausage and Bean Sprout Stew, which boasts a flavor profile rivaling that of seafood stew! The crisp bean sprouts and savory sausages come together for a delightfully spicy and deeply satisfying dish. It’s truly delicious!
Main Ingredients- 1 bag (approx. 300g) bean sprouts
- 1 package (approx. 200g) Vienna sausages
- 1 stalk green onion
- 1/2 onion
- 1 cup water (using a paper cup, approx. 200ml)
Seasoning- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 4 Tbsp Soy sauce
- 1 Tbsp Sugar
- 1 Tbsp Minced garlic
- 1 Tbsp Sesame oil
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 4 Tbsp Soy sauce
- 1 Tbsp Sugar
- 1 Tbsp Minced garlic
- 1 Tbsp Sesame oil
Cooking Instructions
Step 1
First, thoroughly wash the bag of bean sprouts and let them drain in a colander. Keeping them crisp is key to this dish.
Step 2
Peel the onion and slice it thinly into strips. Slice the green onion and Vienna sausages diagonally. Diagonal cuts on the sausages help them absorb the seasoning better.
Step 3
Lightly oil a heated pan and add the Vienna sausages. Sauté them over medium-low heat until they are golden brown. Once they are about halfway cooked, pour in 1 cup of water (approximately 200ml, measured with a paper cup) and bring it to a boil. The rendered fat from the sausages will add a wonderful depth of flavor.
Step 4
Once the water is boiling, add the sliced green onions, onion, and the washed bean sprouts. Now, add all the seasoning ingredients except for the sesame oil (gochujang, gochugaru, soy sauce, sugar, minced garlic). Mix gently to coat the bean sprouts and sausages evenly with the sauce.
Step 5
Cover the pan with a lid and bring it to a rolling boil over high heat. Allow it to cook until the bean sprouts are tender and cooked through, releasing their moisture.

When the bean sprouts have softened and the liquid has reduced to a simmer, it’s time to thicken the stew. In a small bowl, mix 1 Tbsp of cornstarch with 2 Tbsp of water to create a slurry. Gradually add this cornstarch slurry to the stew while stirring constantly to prevent lumps. Adjust the consistency until it’s nicely thickened.
Step 7
Once the stew has reached your desired thick consistency, drizzle in 1 tablespoon of sesame oil for extra aroma and flavor. Give it a final mix, and your delicious Sausage and Bean Sprout Stew is ready!
