Freshly made scallion kimchi (pa kimchi) can be enjoyed for its crisp texture, and when slightly aged, it loses its sharp spiciness and develops a rich umami flavor, offering a different kind of delight. As time passes and the kimchi becomes well-fermented, it transforms into a delicious kimchi stew, boasting a deep and robust broth. This stew has a unique taste, distinct from stews made with just aged kimchi. Today, we’ve made a special ‘Pa Kimchi Jeon’ using this versatile scallion kimchi in two versions! One is a flavorful version made by stir-frying the ingredients, and the other is a convenient version made by mixing everything directly. Basic Batter Ingredients- 1 cup pancake mix
- 1 + 1/4 cups cold water
- 150g can tuna (1 can)
Stir-fried Pa Kimchi Jeon Ingredients- 10-12 stalks of pa kimchi
- 1/8 onion
- 1 Tbsp cooking oil
- 10-12 stalks of pa kimchi
- 1/8 onion
- 1 Tbsp cooking oil
Cooking Instructions
Step 1
First, pour 1 cup of pancake mix into a large bowl. Add 1 and 1/4 cups of cold water. Whisk thoroughly with a whisk or chopsticks until the batter is smooth and lump-free. Using cold water will help make the pancake crispier.
Step 2
Next, add the entire 150g can of tuna, including the oil, to the batter. Gently mix everything together to create the pancake batter. Adding tuna enhances the umami and flavor, making it even more delicious. This completes your pancake batter.
Step 3
Now, let’s make the stir-fried Pa Kimchi Jeon. Heat 1 Tbsp of cooking oil in a pan over medium heat. Add 10-12 stalks of prepared pa kimchi, cut into bite-sized pieces (about 4-5 cm). Finely julienne 1/8 onion and add it to the pan to stir-fry together.
Step 4
Stir-fry over medium-low heat until the pa kimchi becomes tender and the onion turns translucent. The spicy aroma of the pa kimchi combined with the sweet onion scent will create a delicious stir-fried filling.
Step 5
Push the stir-fried pa kimchi and onion to one side of the pan. Ladle 1-2 scoops of the prepared batter onto the empty side and spread it thinly. Allow the stir-fried ingredients and batter to naturally combine. Spreading the batter thinly will result in a crispier pancake.
Step 6
Once the batter starts to cook, evenly spread the stir-fried pa kimchi and onion mixture over the batter. When the bottom side is golden brown, flip the pancake and cook the other side until it’s also golden brown. Your delicious stir-fried Pa Kimchi Jeon is ready!
Step 7
If you find the process of stir-frying the pa kimchi cumbersome each time, here’s a simpler second method. To the remaining batter, add 1/4 finely julienned onion and 3/4 cup of pa kimchi cut into 4-5cm lengths. Mix these ingredients directly into the batter to create a simple version. This completes the batter for the easy version.
Step 8
Heat a pan with a generous amount of cooking oil. Spread the prepared batter thinly onto the pan. Cook over medium-low heat until both sides are golden brown. This way, you can enjoy a delicious Pa Kimchi Jeon conveniently without the stir-frying step. Both versions are wonderful, so choose your favorite!
