- 1 Tbsp Doenjang (Korean fermented soybean paste) (adjust based on the saltiness of your doenjang)
- 2 tsp Sesame oil
- 1 tsp Sugar
- A pinch of toasted sesame seeds (optional, adjust to taste)
Cooking Instructions
Step 1
First, prepare your chili peppers. I prefer using Cheongyang peppers for a bit of a kick, but if you’re serving this to children or those who don’t enjoy spicy food, feel free to mix in milder Korean ‘asagi’ peppers or green bell peppers. Prepare about 10 to 15 peppers based on your preference.
Step 2
Remove the stems from the prepared chili peppers. Wash them thoroughly under running water and then drain them completely. It’s crucial to get rid of excess water, as it can dilute the flavor of the dish.
Step 3
Once the peppers are dry, slice them into bite-sized pieces, about 1.5 cm thick. Avoid slicing them too thinly, as they might become mushy.
Step 4
Now, let’s make the delicious seasoning. In a bowl, add 1 tablespoon of Doenjang. Doenjang can vary in saltiness depending on the brand, so it’s best to taste and adjust the amount. Start with 1 tablespoon and add more if needed. Add 1 teaspoon of sugar; this helps to balance the saltiness of the doenjang and adds a touch of sweetness and depth.
Step 5
Next, add 2 teaspoons of sesame oil for a rich, nutty aroma. Drizzling a little extra sesame oil at the end can enhance the fragrance even further.
Step 6
Whisk the seasoning ingredients together with a spoon until well combined. Make sure the doenjang is smoothly incorporated without any lumps.
Step 7
Finally, add a pinch of toasted sesame seeds for extra nuttiness. Rubbing them between your palms before adding them can release more of their aroma.
Step 8
Now that the seasoning is ready, it’s time to add the sliced chili peppers. Place the prepared peppers into the doenjang mixture and,
Step 9
Gently mix everything together until the peppers are well coated with the seasoning. This simple chili and doenjang stir-fry is incredibly easy to make, and its spicy, savory flavor is truly outstanding – it’s a rice thief! It tastes great immediately, but letting it sit in the refrigerator for a short while will allow the flavors to meld, making it even more delicious. Enjoy your cooking!
