Ingredients

  • 1 packet of instant ramen (choose your favorite)
  • 1 stalk of scallion (use both white and green parts)
  • 1/4 onion
  • 1 Tbsp minced garlic
  • 1 egg
  • 1 Tbsp red pepper flakes (gochugaru)

Cooking Instructions

Step 1

First, let’s prepare the vegetables. Thinly slice 1/4 onion. Cut the green parts of the scallion stalk into about 5cm lengths. For the white part of the scallion, slice it thinly into strips and soak them in cold water for 5 minutes to remove any harshness. Drain them thoroughly and pat dry. This preparation enhances the refreshing flavor and aroma of the scallions.

Step 2

Heat a pan over medium heat and add a little cooking oil. Add 1 Tbsp of minced garlic and sauté for about 10 seconds until fragrant, being careful not to burn it. Next, add the sliced onion and the roughly cut green parts of the scallion. Stir-fry together for 30 seconds to bring out the natural sweetness of the vegetables.

Step 3

Add the ramen soup base and 1 Tbsp of red pepper flakes to the sautéed vegetables. Stir-fry for another 10 seconds or so. Frying the soup base and chili flakes first deepens the flavors of the ingredients and significantly enhances the broth’s taste. Stir quickly to prevent burning.

Step 4

Pour in 450ml of water and bring it to a boil over high heat. Once the water is rapidly boiling, add the ramen noodles and cook until they reach your desired tenderness. You can adjust the cooking time based on your preference.

Step 5

While the noodles are cooking, prepare the egg. Carefully place the whole egg into one side of the boiling ramen broth, like making a poached egg. This will result in a soft, perfectly cooked poached egg with a runny yolk. Alternatively, you can crack and whisk the egg into the broth if you prefer.

Step 6

Once the noodles are cooked to your liking, turn off the heat. Carefully transfer the ramen into a serving bowl. Finally, generously top with the prepared fresh, crisp scallion strips. Your delicious Spicy Scallion Ramen is now complete! Enjoy it while it’s hot.
