Spicy Scallion Ramen

Ramen is even tastier with the addition of scallions! Today, let’s try a unique ramen experience. This spicy ramen, featured on ‘What Should I Eat Today?’, offers a wonderfully comforting and flavorful meal. The combination of zesty scallions and a spicy broth is truly irresistible.
Main Ingredients- 3 packs Ramen noodles
- 1 stalk Scallions (green onions)
- 1 Egg
- 1/2 medium Onion
Seasoning & Aromatics- 1 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Minced garlic
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp Minced garlic
Cooking Instructions
Step 1
First, prepare the scallions. Finely chop the green parts of the scallion. These will add flavor to the broth.
Step 2
Julienne the white parts of the scallions and soak them in cold water. These will be used as a garnish later, providing a refreshing crunch and visual appeal.

Thinly slice the half onion. Heat a pan over medium-low heat without oil. Add the sliced onion and 1/2 Tbsp of minced garlic, and stir-fry until the onion becomes translucent and releases its sweetness. This builds the flavor base.

Once the onion and garlic are fragrant and softened, add the chopped green parts of the scallion and 1 Tbsp of gochugaru. Stir-fry together for about 1 minute until the aromas of the scallion and chili flakes meld.

Keep the heat low during this stage to prevent the gochugaru from burning. Stir gently to ensure even cooking and to avoid scorching, as burnt chili flakes can impart a bitter taste.

Add the ramen seasoning packet to the stir-fried aromatics. Pour in about 80% of the water you would normally use for 3 packs of ramen (approximately 1500ml). For an extra kick of heat, you can add 1-2 chopped Cheongyang chili peppers at this point for a wake-up call of spiciness.

When the noodles are about 80% cooked (after approximately 2 minutes of boiling), add the remaining 20% of hot water (about 300ml). Bring it back to a boil and immediately turn off the heat.
