Spicy Seasoned Ark Shells with Wild Garlic
Ark Shells Rich in Iron: Delicious Spicy Seasoned Ark Shells as a Side Dish!
Ark shells, also known as ‘Ppeemak’ or ‘Ppeejokae’, are remarkably large clams. I absolutely adore them and wanted to savor a mouthful of their deliciousness, so I bought some ark shells to make spicy seasoned ones. They are incredibly tasty with rice! Their large size contributes to a wonderfully satisfying texture. The preparation method is the same as for regular seasoned ark shells, but using these larger ones makes for an even more delightful meal.
Ingredients- Ark shells (Ppeejokae/Ppeemak) 20 count
- Coarse salt 1 Tbsp
Seasoning Sauce- Wild garlic (Dallae) 1 bundle
- Gochugaru (Korean chili powder) 1 Tbsp
- Sesame oil 2 Tbsp
- Sesame seeds 1 Tbsp
- Soy sauce, enough to generously coat

Cooking Instructions
Step 1
Prepare the ark shells, which are about the size of my fist. I bought a basketful for 10,000 won. While cleaning them, I counted 37 shells. I used 20 for the seasoned ark shells and made a spicy ark shell salad with the remaining 17.
Step 2
Rinse the ark shells thoroughly under running water. Use a toothbrush or a soft brush to scrub off any dirt or debris from the shells, then rinse again.
Step 3
Add 1 tablespoon of coarse salt to a bowl with the ark shells and let them purge for about 20 minutes. You’ll notice them moving and opening their shells slightly as they are alive.
Step 4
Now, let’s make the delicious seasoning sauce for the ark shells. Finely chop the cleaned bundle of wild garlic. In a bowl, combine 1 Tbsp of gochugaru, about 2-3 Tbsp of soy sauce (enough to generously coat), 1 Tbsp of sesame seeds, and 2 Tbsp of sesame oil. Mix well. This sauce is incredibly versatile and can be used for bibimbap or other dishes, making it a fantastic ‘all-purpose dallae soy sauce’! I particularly love this combination with ark shells – it’s a match made in heaven! ♡
Step 5
Rinse the purged ark shells lightly under running water. Bring a pot of water to a rolling boil. Add the ark shells and boil for 3 to 5 minutes, stirring in one direction. (The reddish color in ark shells comes from their internal organs and naturally disappears when cooked, so don’t worry.) Once cooked, immediately rinse them under cold water to cool them down. Be gentle; don’t scrub the shells, just splash them with water as if cooling them.
Step 6
Carefully remove one side of the shell from each cooked ark shell. If a shell is difficult to open, you can use the back of a spoon to gently pry it open by twisting it.
Step 7
Arrange the ark shell meat neatly and generously spoon the prepared spicy wild garlic sauce over them. Enjoy with a bowl of rice!
