  • 300g fresh soybean sprouts
  • 25g green onions (about 3-4 stalks)
  • 1/2 Tbsp minced garlic

Spicy Seasoning
  • 1 Tbsp gochugaru (Korean chili flakes, adjust to taste)
  • 2 Tbsp soy sauce (or regular soy sauce)
  • 1/2 tsp sugar
  • 2/3 Tbsp salt (adjust based on soy sauce saltiness)
  • 1.5 Tbsp sesame oil
  • 1 tsp sesame seeds (for garnish)

Cooking Instructions

Step 1

Wash the fresh soybean sprouts thoroughly under running water. If there are any dirty or attached roots, trimming them slightly will make the dish more presentable.

Step 2

Chop the green onions into bite-sized pieces, about 2-3 cm long. The onion flavor will further enhance the overall taste of the bean sprouts.

Step 3

Bring about 1 liter of water to a boil in a pot. Once boiling, add 1/2 Tbsp of salt and then the soybean sprouts. Cover the pot and boil for about 4-5 minutes after the steam rises, or until you can smell the ‘cooked bean sprouts’ aroma. Be careful not to overcook them, as they can become mushy. Quickly rinse the blanched bean sprouts in cold water to stop the cooking process. Drain them thoroughly in a colander; excess water can dilute the seasoning.

Step 4

In a large mixing bowl, combine the drained bean sprouts, chopped green onions, and minced garlic.

Step 5

Add the seasoning ingredients: gochugaru, soy sauce, salt, and sugar. Gently mix everything together with your hands, ensuring the seasoning is evenly distributed. Taste and adjust saltiness if needed by adding a little more salt.

Step 6

Finally, add the sesame oil and sesame seeds and toss once more to combine. The nutty aroma of sesame oil and the texture of sesame seeds complete the dish. You can serve the seasoned bean sprouts immediately or enjoy them chilled from the refrigerator.
