Main Ingredients- 12 frozen shrimp
- 1 stalk of green onion
- 3 eggs
- 2 cloves garlic

Cooking Instructions
Step 1
Thaw the Shrimp: If using frozen shrimp, place the unopened bag in cool water to thaw it quickly and keep it fresh. Thawing in the bag is hygienic.
Step 2
Prepare the Shrimp: Remove the sharp pointy part near the tail and the whiskers from the thawed shrimp. Using kitchen scissors, make a lengthwise cut from the head along the back to the tail (about 2-3 cm deep). This makes peeling much easier later.
Step 3
Prepare Aromatics: Thinly slice the garlic cloves into slivers (minced garlic) and chop the green onion into fine strips. Having your ingredients prepped beforehand will make the cooking process much smoother.
Step 4
Sear the Shrimp: Pat the prepared shrimp dry with paper towels. Heat a generous amount of cooking oil or olive oil in a pan over medium heat. Sear the shrimp on both sides until lightly golden. Searing the shrimp first helps lock in the juices, resulting in a chewier, more satisfying texture.
Step 5
Peel the Shrimp: Transfer the seared shrimp to a plate and let them cool slightly. They don’t need to be fully cooked at this stage. While they are still warm, use your fingers to open the cut along the back; the shell should peel off easily. (Peel the body shell, leaving the tail on if desired).
Step 6
Make Scrambled Eggs: Add a little more oil to the same pan. Push the sliced garlic to one side and pour in the 3 beaten eggs. Scramble the eggs until they are cooked but still soft. Try not to break them into tiny pieces; larger curds will provide a better texture when mixed with the rice.
Step 7
Sauté Shrimp and Aromatics: Push the scrambled eggs and garlic to one side of the pan. Add the peeled shrimp and sauté them with the aromatics until the shrimp are fully cooked through.
Step 8
Add Green Onions and Soy Sauce: Add the chopped green onions to the pan. Drizzle 1 tablespoon of soy sauce over the green onions and stir-fry everything together. This helps the soy sauce develop its flavor with the onions. (Reserve the remaining 1 Tbsp soy sauce for the rice).
Step 9
Cook Further (Optional): If the shrimp are not yet fully cooked, reduce the heat slightly and continue cooking for another 1-2 minutes. If you like it spicier, you can add a little more red pepper flakes at this stage.
Step 10
Add Spice: Sprinkle 1 tablespoon of red pepper flakes evenly over the mixture. Stir-fry well to combine everything. The aroma of the chili flakes will tantalize your appetite.
Step 11
Add Rice and Remaining Soy Sauce: Add 4 bowls of cooked rice to the pan. Drizzle the remaining 1 tablespoon of soy sauce over the rice to season it. Ensure each grain of rice is coated for even flavor.
Step 12
Final Stir-Fry: Gently mix the rice with all the ingredients. To prevent the scrambled eggs from making the rice look messy, add them in at the very end and gently toss, or serve them on top of the rice. Sprinkle with sesame seeds for extra flavor and nutty aroma. (A drizzle of sesame oil at the end will enhance the overall taste.)
