  • 30 fresh shrimp
  • Cornstarch or potato starch, for coating
  • Salt, to taste
  • Black pepper, to taste
  • Cooking oil, for frying (or a small amount for air frying)

Spicy Sauce Ingredients

  • 1 Tbsp chili oil
  • 2 Tbsp oyster sauce
  • 1 Tbsp sugar
  • 1/2 Tbsp minced garlic
  • A splash of cooking wine (like mirin or sake)

Cooking Instructions

Peel the shrimp, leaving the tails intact if desired. Remove the heads and discard. Carefully devein the shrimp by making a shallow cut along the back and pulling out the dark intestinal tract with a toothpick. Rinse the shrimp under cold water and pat them dry.

Thread the prepared shrimp onto skewers, about 2-3 shrimp per skewer. Season both sides of the shrimp with a pinch of salt and freshly ground black pepper. This initial seasoning will enhance the natural sweetness of the shrimp.

Lightly coat the seasoned shrimp on all sides with starch, shaking off any excess. If using an air fryer, lightly grease the basket or line it with parchment paper. Arrange the skewered shrimp in a single layer. Air fry at 180°C (350°F) for about 10 minutes until golden brown. (Pan-frying alternative: Heat a generous amount of cooking oil in a pan over medium heat and fry the skewers until golden brown on all sides.)

While the shrimp are cooking, prepare the sauce. In a small bowl, combine the chili oil, oyster sauce, sugar, minced garlic, and cooking wine. Whisk until well combined. Once the shrimp are cooked, remove them from the air fryer (or pan) and brush them generously with the prepared sauce. Return them to the air fryer and cook for an additional 5 minutes at 180°C (350°F), or until the sauce is sticky and caramelized. Your delicious spicy shrimp skewers are ready to serve!
