Main Ingredients- 1 package Soft Tofu (approx. 300-400g)
- 100g Minced Pork (leaner cuts recommended)
- 1/4 Onion
- 1/2 Green Onion
- 1 Red Chili Pepper (or 1/2 Korean Green Chili Pepper for extra spice)
- 200ml Anchovy Broth (or rice water, plain water)
Spicy Sauce- 1/2 Tbsp Minced Garlic
- 2 Tbsp Soy Sauce (regular or light)
- 1 Tbsp Cooking Wine (Mirin)
- 1 Tbsp Gochugaru (Korean Chili Flakes, adjust to spice preference)
- Pinch of Black Pepper
- Sesame Seeds (for garnish)
Slurry for Thickening- 1/2 Tbsp Cornstarch (or potato starch)
- 1 Tbsp Water
- 1/2 Tbsp Minced Garlic
- 2 Tbsp Soy Sauce (regular or light)
- 1 Tbsp Cooking Wine (Mirin)
- 1 Tbsp Gochugaru (Korean Chili Flakes, adjust to spice preference)
- Pinch of Black Pepper
- Sesame Seeds (for garnish)
Slurry for Thickening- 1/2 Tbsp Cornstarch (or potato starch)
- 1 Tbsp Water
Cooking Instructions
Step 1
Pat the minced pork dry with paper towels to remove excess blood. This helps to reduce any gamey odors and ensures a cleaner flavor.
Step 2
Thinly slice the onion. Finely chop the green onion and red chili pepper. The red chili adds color, but feel free to add a small amount of Korean green chili for more heat if you prefer.
Step 3
In a small bowl, combine all the sauce ingredients: 1/2 Tbsp minced garlic, 2 Tbsp soy sauce, 1 Tbsp cooking wine, 1 Tbsp gochugaru, and a pinch of black pepper. Mix well to create a flavorful sauce.
Step 4
In another small bowl, mix together 1/2 Tbsp cornstarch and 1 Tbsp water until smooth. This slurry will be used later to thicken the sauce.

Heat a skillet over medium heat and add a little cooking oil. Add the chopped green onions and stir-fry until fragrant. Then, add the minced pork and stir-fry, breaking it up, until it turns white. Add the sliced onion and red chili pepper, and stir-fry until the onion becomes translucent.
Step 6
Once the onions start to turn translucent, pour in the 200ml of anchovy broth and the prepared spicy sauce. Bring to a boil over medium-high heat, allowing the flavors to meld.
Step 7
When the sauce is bubbling, carefully add the soft tofu, keeping it in large chunks. Using a spatula, gently break the tofu into bite-sized pieces (about 2-3 cm) while stirring. The goal is to coat the tofu with the sauce without completely mashing it, preserving its soft texture.
Step 8
Continue to simmer over medium-low heat for about 2-3 minutes, allowing the tofu to absorb the flavors. When the sauce begins to thicken slightly, slowly pour in the cornstarch slurry while stirring to reach your desired consistency. Once thickened, remove from heat, sprinkle with sesame seeds, and serve. Spoon this delicious soft tofu topping generously over a bowl of hot steamed rice.
