Ingredients

  • 1 Tbsp sesame oil
  • 1/2 Tbsp minced garlic
  • 1 stalk green onion (separate white and green parts)
  • 1 Tbsp fine gochugaru (Korean chili flakes)
  • 1 package soft tofu (350g)
  • 2 cups anchovy/kelp broth
  • 2 Tbsp soup soy sauce (guk-ganjang)

Cooking Instructions

Step 1

First, heat a pot over medium-low heat and add 1 Tbsp of sesame oil. Add 1/2 Tbsp of minced garlic and the thinly sliced white parts of 1/2 green onion. Sauté for about 1 minute until the garlic is fragrant, being careful not to burn it.

Lower the heat to low and add 1 Tbsp of fine gochugaru. Stir-fry evenly with the garlic and onion for about 30 seconds. Stir-frying gently will prevent the chili powder from burning and contribute to a deeper, less bitter flavor.

Now, open the package of soft tofu (350g) and add it to the pot. Use a spoon to break the tofu into 2-3 large pieces. Gently stir-fry for a moment to combine it with the sautéed seasonings. Avoid over-mixing to keep the tofu tender.

Pour in 2 cups of anchovy and kelp broth into the pot with the tofu. Stir to combine the broth with the ingredients. If you don’t have anchovy broth, rice water can also be used for a pleasant, savory taste.

Add 2 Tbsp of soup soy sauce (guk-ganjang) to season. Taste and adjust the seasoning with more guk-ganjang or salt if needed, according to your preference. Bring the stew to a boil over medium heat and let it simmer for 3-5 minutes until the tofu is tender.

Once the stew is simmering and the tofu is cooked, add the thinly sliced green parts of 1/2 green onion and simmer for another minute to finish. The fresh onion flavor adds a wonderful aroma. Serve hot and enjoy immediately!
