Spicy Soft Tofu Yeol Ramen
My Recipe for Deliciously Spicy Soft Tofu Yeol Ramen (A Single Serving That Feels Like More!)
I decided to try making the famous Soft Tofu Yeol Ramen. This dish combines the incredibly spicy ‘Yeol Ramen’ with silky soft tofu, creating a soul-warming, perfectly balanced bowl of spicy noodle soup.
Ingredients- 1 packet Yeol Ramen (spicy Korean ramen)
- 1/3 onion, thinly sliced
- A small amount of green onion, chopped
- 1/2 Tbsp minced garlic
- A little cooking oil
- 1/2 Tbsp gochugaru (Korean chili flakes), adjust to taste
- 400ml water
- 1/2 block soft tofu (sundubu)
Cooking Instructions
Step 1
First, prepare your aromatics and vegetables. Finely mince the garlic, thinly slice the onion, and chop the green onion. Having everything prepped makes the cooking process much smoother.
Step 2
Lightly coat a pot with cooking oil. Add the minced garlic, sliced onion, and chopped green onion. Sauté over medium-low heat until fragrant. This step infuses the oil with the savory flavors of garlic and green onion, creating a richer broth base.
Step 3
Once the aromatics are lightly sautéed, pour in 400ml of water. You can refer to the water amount recommended on the ramen packet, but consider slightly reducing it as you’ll be adding soft tofu.
Step 4
Bring the water to a rolling boil over high heat. Once boiling, add the dried vegetable and seaweed packet that comes with the Yeol Ramen. This is crucial for building the foundational flavor of the broth.
Step 5
Along with the vegetable packet, add the spicy powder soup base from the Yeol Ramen. This is the key to the ramen’s signature spiciness, so feel free to adjust the amount according to your preference.
Step 6
Now it’s time to add the soft tofu. Use a spoon to gently break apart and add half a block of soft tofu into the pot. Adding it in chunks provides a lovely texture and allows the silky tofu to meld beautifully with the spicy broth.
Step 7
For an extra kick of heat and deeper flavor, add 1/2 Tbsp of gochugaru (Korean chili flakes). You can adjust this quantity to control the spiciness level to your liking.

Finally, break the ramen noodles in half and add them to the pot. Breaking the noodles helps them cook evenly and ensures they are well incorporated into the broth.
Step 9
Once the noodles are partially cooked and still have a slight bite (al dente), make a small well in the center of the pot and crack an egg directly into it. Carefully place the egg so the yolk remains intact for a beautiful presentation.
Step 10
Cover the pot and let it simmer for another 1-2 minutes, or until the noodles are fully cooked and the egg is set to your liking. Your delicious Soft Tofu Yeol Ramen is now ready! Serve immediately while piping hot for the best experience. A crack of black pepper at the end is also a nice touch.
