Spicy & Flavorful Stir-Fried Anchovies Recipe

A delightful blend of spicy anchovies and fiery chili peppers that will have you reaching for another bowl of rice! This recipe for stir-fried anchovies, infused with a satisfying kick, is perfect as a side dish or even a snack with drinks.
Main Ingredients- Prepared anchovies 1 bowl (approx. 200g)
- Cheongyang chili peppers 8
Seasoning & Others- Soy sauce 2 Tbsp
- Minced garlic 1/2 Tbsp
- Oligosaccharide 1 Tbsp (or corn syrup)
- Toasted sesame seeds, a pinch
- Cooking oil, as needed

Cooking Instructions
Step 1
First, prepare the anchovies by thoroughly removing their fins and innards. If the anchovies are large, you can rinse them lightly under running water and ensure they are completely drained. This preparation step helps to eliminate any bitterness, resulting in a more savory flavor.

Step 2
Trim the stems off the Cheongyang chili peppers and thinly slice them. If you enjoy a strong spicy flavor, leave the seeds in. If you prefer a milder heat, you can remove the seeds before slicing. For added color, consider mixing in some red chili peppers.

Step 3
Heat a deep pan or wok over low heat without adding any oil. Add the prepared anchovies and stir-fry them, being careful not to burn, until they become fragrant and slightly toasted. This usually takes about 2-3 minutes and helps to remove any fishy smell. Once toasted, push the anchovies to one side of the pan to make space for the next ingredients.

Step 4
In the cleared space of the pan, add the sliced Cheongyang chili peppers and stir-fry briefly to release their aroma. Then, add the soy sauce (2 Tbsp) and cooking oil (about 1-2 Tbsp). Quickly toss the anchovies and peppers to coat them evenly with the sauce. Continue stir-frying for about 1 minute, allowing the soy sauce to penetrate the anchovies.

Step 5
Now it’s time to add the finishing touches. Add the minced garlic (1/2 Tbsp) and oligosaccharide (1 Tbsp) to the pan. Oligosaccharide adds a nice sheen and a touch of sweetness, creating a perfect balance with the spicy chili peppers. If you don’t have oligosaccharide, corn syrup can be used as a substitute.

Step 6
Finally, sprinkle in toasted sesame seeds to your liking. Quickly stir everything together with a “swish~ swish~” motion for another minute, ensuring all ingredients are well combined. Be careful not to overcook, which can make the anchovies too hard. Transfer the finished spicy and sweet stir-fried anchovies to a serving dish. It’s delicious served over freshly steamed rice or packed as a side for lunchboxes!
