Main Ingredients- 4 heads of Bok Choy, washed and quartered
- 1 Red chili pepper, seeded and thinly sliced
- 1 Green chili pepper (like Serrano or Jalapeño), seeded and thinly sliced
- 20cm segment of Green onion (white and green parts), thinly sliced
- 3 cloves Garlic, minced
Seasoning Ingredients- 1 Tbsp Oyster sauce
- 1 Tbsp Soy sauce
- 1/4 tsp Sugar
- 1 Tbsp Oyster sauce
- 1 Tbsp Soy sauce
- 1/4 tsp Sugar
Cooking Instructions
Step 1
Thoroughly wash the bok choy under running water. Trim the base and cut each head into four wedges, making them bite-sized. If the stems are particularly thick, you can cut them in half lengthwise as well.
Step 2
Prepare your aromatics and chili peppers. Seed the red chili and green chili peppers and thinly slice them for a touch of heat. Thinly slice the green onion. Mince the garlic cloves. Heat a wok or large skillet over medium-high heat and add a generous amount of cooking oil. Add the minced garlic and stir-fry until fragrant, about 30 seconds. Be careful not to burn the garlic, as this will impart a bitter flavor.
Step 3
Once the garlic is fragrant, add the prepared bok choy to the wok. Stir-fry briskly over medium-high heat for about 1-2 minutes, or until the bok choy is slightly wilted but still has a crisp texture. Overcooking will make it soggy, so aim for tender-crisp.
Step 4
When the bok choy is almost tender-crisp, add the oyster sauce, soy sauce, and sugar. Toss everything together well to coat the bok choy evenly with the sauce. Continue to stir-fry for another 30 seconds to a minute until the sauce has thickened slightly and coats the vegetables beautifully. Remove from heat and serve immediately.
