Main Ingredients
- 1 pack boneless chicken feet (approx. 300-400g), prepped
- 1 medium onion
- A generous amount of fresh perilla leaves (to taste)
- 1 Korean red chili pepper (for spice level adjustment)
Spicy Sauce
- 2 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp corn syrup (or oligodang)
- 1 Tbsp cooking wine (mirin or cheongju)
- 50g minced onion (about 1/4 medium onion)
- 30g minced green onion (white part, about 1/4 stalk)
- 3 cloves garlic, minced
- 2g fresh ginger, finely minced (about 1/4 clove of garlic size)
- 1 tsp sesame oil
- 2 Tbsp gochugaru (Korean chili powder)
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp corn syrup (or oligodang)
- 1 Tbsp cooking wine (mirin or cheongju)

Cooking Instructions
Step 1
First, let’s prepare the delicious sauce for our chicken feet! In a bowl, combine 2 Tbsp gochugaru, 1 Tbsp gochujang, 1 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp corn syrup, and 1 Tbsp cooking wine. Mix them well. Next, add 50g of minced onion for aroma, 30g of minced green onion (white parts), minced garlic from 3 cloves, and about 2g of very finely minced fresh ginger (roughly the size of 1/4 garlic clove). Stir everything until smooth and well combined, ensuring there are no lumps. Finally, finely chop 1 Korean red chili pepper (seeds removed, if preferred) and add it to the sauce for a spicy kick. Stir again to ensure all ingredients are evenly distributed.
Step 2
Next is prepping the chicken feet. Although store-bought boneless chicken feet are usually clean, give them a quick rinse and pat them dry. Place the chicken feet in a pot and add 1 Tbsp of cooking wine (not part of the sauce ingredients) to help remove any gamey odors and slightly par-boil them. Add enough water to cover the chicken feet. Once the water comes to a rolling boil, let it cook for just 1-2 minutes. Be careful not to overcook, as this can make the texture tough. Quickly drain the par-boiled chicken feet and rinse them under cold water to remove any residue and stop the cooking process. Ensure they are thoroughly drained.
Step 3
Now, it’s time to stir-fry the chicken feet! Heat a pan over medium heat and add a little cooking oil. Add minced garlic (not part of the sauce ingredients) and sauté until fragrant. Once the garlic aroma is released, add the prepared boneless chicken feet and stir-fry until the surfaces are lightly cooked. At this stage, add another 1 Tbsp of cooking wine (not part of the sauce ingredients) and stir-fry. This helps impart a smoky flavor, making the chicken feet even more delicious. It’s important to stir-fry them until they develop a slightly chewy texture.
Step 4
It’s time to add the star of the dish: the spicy sauce! Pour the prepared sauce generously over the chicken feet in the pan. Reduce the heat to medium-low and carefully stir-fry for about 3-4 minutes, allowing the sauce to coat the chicken feet evenly. Be mindful to prevent the sauce from burning, and continue stirring to ensure the chewy chicken feet and the spicy-sweet sauce blend together perfectly.
Step 5
Finally, let’s add fresh vegetables and finish the dish. Slice the onion into thick, 0.5cm pieces following the grain; this helps it maintain its shape and texture when stir-fried. Wash the perilla leaves and slice them into long, thin strips. Add the sliced onion to the stir-frying chicken feet and cook until it becomes slightly translucent. Then, add the julienned perilla leaves and gently toss everything together for about 1 minute, just until the leaves wilt slightly.
