Main Ingredients- 200g Napa cabbage, cut into large pieces
- 100g Minced pork
- 1/2 stalk Green onion, sliced diagonally
- 4 Vietnamese chili peppers, seeds removed and halved
Cooking Instructions
Step 1
Wash the napa cabbage thoroughly. Cut it in half lengthwise, then cut each half into 2-3 larger pieces. It’s best to keep the pieces relatively large to maintain a crisp texture after stir-frying, as smaller pieces can become mushy.
Step 2
Wash the green onion and slice it diagonally, including both the white and green parts, about 0.5cm thick. The fragrant aroma of the green onion will add depth to your stir-fry.
Step 3
To add a spicy kick, halve the Vietnamese chili peppers after removing the stems. If you prefer less heat, you can remove the seeds; for more heat, leave the seeds in or add extra peppers.
Step 4
Heat a pan over high heat and add 4 tablespoons of chili oil. Add the minced garlic, diagonally sliced green onion, and halved Vietnamese chili peppers. Stir-fry quickly until fragrant, being careful not to burn them. This process will bring out the aromatic flavors of the garlic and green onion.
Step 5
Once the aromatics are fragrant, add 100g of minced pork. Sprinkle with a pinch of salt and a pinch of black pepper. Break up any clumps of pork and stir-fry over high heat until it is no longer pink and is crumbly.
Step 6
When the pork is fully cooked, add the prepared napa cabbage to the pan. Add 1 tablespoon of oyster sauce, 1 tablespoon of fish sauce, and 0.5 tablespoon of sugar. Continue to stir-fry over high heat, tossing everything together until well combined and the cabbage is slightly wilted but still crisp. The sauce should coat all the ingredients evenly. Taste and adjust seasoning with additional salt or fish sauce if needed before serving.
