Main Ingredients

  • Pork (belly or neck, your preference) 500g
  • 1 Onion (medium-sized)
  • 2 Cheongyang peppers (Korean chili peppers)
  • 1/2 Green onion stalk

Seasoning Ingredients

  • 1/2 Tbsp minced garlic
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 3 Tbsp soy sauce
  • 2 Tbsp corn syrup (or rice syrup)
  • 1 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp soju (or cooking wine)
  • Pinch of black pepper

Cooking Instructions

Step 1

First, let’s make the seasoning sauce for the Jeyuk Bokkeum. In a bowl, combine 1/2 tablespoon of minced garlic, 2 tablespoons of gochugaru, 3 tablespoons of soy sauce, 2 tablespoons of corn syrup, 1 tablespoon of gochujang, and 2 tablespoons of soju (this helps tenderize the meat and reduce gamey odor). Stir well to combine. Finally, add a pinch of black pepper for extra flavor. If the sauce seems too thick, you can add 1-2 tablespoons of water to adjust the consistency.

Add the pork to the prepared seasoning sauce and mix thoroughly to coat the meat evenly. Cover the bowl with plastic wrap and let it marinate in the refrigerator for 1-2 hours. This marinating time allows the flavors to penetrate the pork, resulting in a much richer taste. If you’re short on time, you can proceed to cook it immediately, but marinating will make it significantly more delicious!

Now, let’s prepare the vegetables. Slice the onion into strips. Cut the green onion stalk diagonally. Finely chop the Cheongyang peppers to add a spicy kick. Heat a pan over medium heat and add the marinated pork. Stir-fry the pork until it’s partially cooked. Once the pork is browned, add the sliced onions, green onions, and chopped Cheongyang peppers to the pan. Pour in about one rice bowl of water to keep the ingredients moist and help the sauce meld. Continue to stir-fry, making sure to adjust the heat to prevent the pork from burning. Cook until all ingredients are tender and the sauce has thickened to your liking.
