Main Ingredients- 500g Pork Slices (for bulgogi, e.g., neck or shoulder)
- 1/2 Onion (thinly sliced)
- 1/2 Scallion (cut diagonally)
- 1 Tbsp Minced Garlic
- 2 Tbsp Cooking Wine (Mirin or Cheongju)
- Pinch of Black Pepper
- Cooking Oil (for stir-frying)
- 500g Pork Slices (for bulgogi, e.g., neck or shoulder)
- 1/2 Onion (thinly sliced)
- 1/2 Scallion (cut diagonally)
- 1 Tbsp Minced Garlic
- 2 Tbsp Cooking Wine (Mirin or Cheongju)
- Pinch of Black Pepper
- Cooking Oil (for stir-frying)
Cooking Instructions
Step 1
Before stir-frying the pork, place 500g of pork slices (for bulgogi) in a bowl. Add 2 Tbsp of cooking wine, 1 Tbsp of minced garlic, and a pinch of black pepper. Mix gently with your hands to marinate the pork. This step helps to remove any gamey odor and infuses the meat with flavor.
Step 2
Prepare 1/2 onion. Peel, wash thoroughly, and then thinly slice it lengthwise into about 0.5cm thick strips. Sliced onions add sweetness and texture to the stir-fry.
Step 3
Prepare 1/2 scallion. Cut it diagonally into about 0.5cm thick pieces, including the green parts. The diagonally cut scallions will be added at the end to impart a fresh aroma and vibrant color.
Step 4
In a small bowl, combine all the sauce ingredients: 3 Tbsp soy sauce, 2 Tbsp gochugaru, 2 Tbsp gochujang, 2 Tbsp honey (adjust sweetness to your preference), 2 Tbsp sesame oil, 2 Tbsp cooking wine, and 1 Tbsp minced garlic. Stir well with a spoon until the sauce is smooth and well-mixed. You can use sugar instead of honey.
Step 5
Heat 1-2 Tbsp of cooking oil in a heated pan over medium heat. Add the marinated pork and stir-fry. When the pork is about 80% cooked and its surface has turned white, add the sliced onion and continue to stir-fry. Cook until the onions become translucent, which will enhance their sweetness.
Step 6
Once the pork is fully cooked and the onions are tender, add all the prepared sauce to the pan. Stir-fry quickly over high heat for about 1-2 minutes, ensuring the sauce coats the pork evenly. Be careful not to let the sauce burn.
Step 7
Finally, add the diagonally sliced scallions and stir-fry once more over high heat for a short time. Cook until the scallions are fragrant and the gochujang sauce clings well to the pork. Turn off the heat and serve. The green scallions add a beautiful color to the dish. Enjoy this delicious Jeyuk Bokkeum with a warm bowl of rice!
