  • 1/3 Carrot
  • 1/2 Onion
  • 1 Pepper (e.g., Korean chili pepper or bell pepper)
  • 1/2 stalk Green Onion

Seasoning

  • 1 Tbsp Minced Garlic
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Sugar
  • 1 Tbsp Gochugaru (Korean chili powder)
  • 1 Tbsp Cooking Oil
  • A pinch of Sesame Oil
  • A pinch of Sesame Seeds

1. Prepare the squid. First, carefully clean the squid by removing the innards. Slice the body in half lengthwise and lay it flat. Make shallow diagonal scores on the inside surface; this helps the sauce penetrate and improves the texture. Remove the hard beak from the head and the eyes. Rinse the squid body and tentacles thoroughly under running water. Gently pull on the suckers to remove any grit. Finally, cut the squid into bite-sized pieces.

2. Prepare the vegetables. For this recipe, we’ll use carrot, onion, and chili pepper. Wash and peel the carrot and onion, then slice them into pieces roughly the same size as the squid, or slightly thicker. Chop the chili pepper finely or slice it. If you like it spicier, you can increase the amount of chili or add other types of hot peppers.

3. Heat 1 tablespoon of cooking oil in a pan over medium-low heat. Add the chopped green onion and stir-fry gently until fragrant, creating a flavorful green onion oil. This oil will infuse the dish with a wonderful aroma and sweetness. Stop when the green onion starts to turn golden.

4. Once the fragrant green onion oil is ready, add the prepared squid to the pan and stir-fry over medium heat. Cook until the squid turns opaque white and is almost cooked through. Be careful not to overcook, as squid can become tough. Cook for just about 1-2 minutes after it starts changing color. It’s best to remove it when it still looks slightly undercooked to maintain tenderness.

5. When the squid is partially cooked, it’s time to add the seasonings. Sprinkle 1 tablespoon of minced garlic, 2 tablespoons of soy sauce, 1 tablespoon of sugar, and 1 tablespoon of gochugaru evenly over the squid. Keep the heat at medium and stir to prevent the seasonings from burning.

6. After adding the seasonings, immediately add the sliced carrots and onions to the pan. Stir-fry everything together, ensuring the squid and vegetables are well coated with the sauce. The key is to cook the vegetables until they are tender-crisp.

7. Finally, add the chopped chili pepper and stir-fry quickly. Don’t cook for too long after adding the pepper; just a minute or so until its aroma is released and it’s incorporated with the other ingredients.

8. Your stir-fried squid is almost ready! If you prefer a saucier dish, you can add 1-2 tablespoons of water at this stage and let it simmer briefly. However, I prefer it less saucy, so I didn’t add extra water. Adjust the liquid according to your preference.

9. Time for the final touch! Taste the stir-fried squid and adjust seasoning if necessary by adding a tiny bit more soy sauce or salt. Once the flavor is perfect, turn off the heat. Drizzle with sesame oil and sprinkle with sesame seeds for a final flourish. Enjoy your delicious Ojingeo Bokkeum!
