This recipe doesn’t require a separate squid over rice preparation; instead, we first make a flavorful spicy stir-fried squid, inspired by Baek Jong-won’s style, and then simply serve it over rice. Main Ingredients

  • 1 squid, cleaned (frozen or fresh)
  • 4 leaves of cabbage
  • 1 stalk of green onion
  • 1/2 onion
  • A little carrot
  • 1 hot green chili pepper (like Cheongyang)
  • 1/2 red chili pepper
  • 3 Tbsp cooking oil
  • 1 Tbsp sesame oil
  • 1/2 Tbsp toasted sesame seeds
  • 1/4 cup water (approx. 50ml)

Spicy Seasoning

  • 2 Tbsp soy sauce
  • 2 Tbsp red chili flakes (gochugaru)
  • 1 Tbsp red chili paste (gochujang)
  • 1 Tbsp minced garlic

Cooking Instructions

Squid Preparation Tip: If using frozen squid, thaw it first. For a tender texture, peel the squid. Even with the skin on, it’s not overly tough. To easily peel the skin, use a paper towel – it works wonderfully! If you prefer a chewier texture, feel free to leave the skin on.

Once the squid is prepared, score it lightly with a knife and cut it into bite-sized pieces. First, cut the squid body in half lengthwise.

Make shallow scores about 1 cm apart. If you cut too deeply, the squid might separate easily, so just a light scoring is sufficient.

Rotate the squid and score it again in the opposite direction to create a diamond pattern. This helps the seasoning penetrate better and makes it look more appealing.

Cut the squid body and tentacles into bite-sized pieces. Remember that squid shrinks when cooked, so cut them a little larger than you’d like the final pieces to be.

To make delicious stir-fried squid, we’ll start by making green onion oil. Take about 1/3 of the green onion stalk and chop it finely for the oil.

Slice the remaining 2/3 of the green onion diagonally. These pieces will be added to the stir-fry later.

Slice half an onion into long strips or dice it into bite-sized pieces. I prefer to dice mine for easier eating.

For a spicy kick, thinly slice one hot green chili pepper and half a red chili pepper diagonally.

Mix all the seasoning ingredients well until combined. This creates your flavorful squid stir-fry sauce. If you prefer less salt, you can slightly reduce the amount of soy sauce.

Heat about 3 tablespoons of cooking oil in a pan over medium heat.

Add the finely chopped green onions to the hot oil and stir-fry for about 20 seconds, or until fragrant, to create green onion oil. This infuses the oil with a wonderful aroma.

Once the green onion oil is ready, add the prepared squid to the pan. Stir-fry for about 50% of the way, just until the color changes slightly. We will cook it further with the vegetables, so avoid overcooking the squid at this stage to prevent it from becoming tough.

When the squid is partially cooked, add all the prepared seasoning sauce. Pour in about 1/4 cup of water. This will help the sauce distribute evenly and prevent it from burning.

Once the sauce is well combined with the squid, add all the pre-cut vegetables (green onion, onion, carrot, cabbage, chili peppers) to the pan.

Continue to stir-fry everything together for just a little longer, about 1-2 minutes, until the vegetables are tender-crisp and the squid is fully cooked. Be careful not to overcook, as this can make the squid rubbery and the vegetables mushy.
