When people think of pork back ribs, they often imagine them stewed with kimchi. However, another incredibly popular dish is BBQ pork ribs! Today, I’ll introduce you to a recipe for making these delicious spicy and sweet BBQ pork ribs.

- Bay leaves 5

- Soy sauce 10 Tbsp
- Gochugaru (Korean chili powder) 2 Tbsp
- Oligosaccharide 4 Tbsp
- Sugar 2 Tbsp
- Minced garlic 2 Tbsp

Cooking Instructions
Step 1
First, carefully examine the surface of the pork back ribs. Trim off any visible excess fat, sinew, or membranes with a knife. This step ensures a smoother texture and cleaner taste.

Next, it’s crucial to remove the blood from the ribs. Soak them in cold water for about 30 minutes to 1 hour. I soaked mine for about 40 minutes. Thoroughly draining the blood will eliminate any gamey odor and result in a clean-tasting dish.

Once the blood is removed, it’s time to boil the ribs. In a pot, add the ribs along with the green onion, garlic cloves, peppercorns, and bay leaves. Cover with water. Bring to a boil over high heat, then reduce to medium heat and simmer for about 50 minutes. Adding aromatics like these during boiling helps effectively remove any unwanted pork odor.
Step 4
While the ribs are boiling, let’s prepare the delicious BBQ sauce! In a bowl, combine the soy sauce, gochugaru, oligosaccharide, sugar, minced garlic, ketchup, and pepper. Mix everything well until there are no lumps. You’ll have a perfectly balanced sweet and slightly spicy sauce.

After about 50 minutes, the ribs should be nicely tender. They will have a savory aroma, reminiscent of a rich pork broth.

Carefully remove the boiled ribs from the pot and drain them thoroughly. It’s important to get rid of excess water, as it can prevent the sauce from adhering properly. Once drained, transfer the ribs to a frying pan.
