While it may not be as soupy as the sundae stir-fries you buy outside, making it at home is a unique delicacy in its own right. This dish combines chewy sundae with tender beef and crisp vegetables in a spicy and sweet sauce, perfect as a side dish for rice or a delightful accompaniment to drinks!

Main Ingredients

  • 1 pack Sundae (Korean blood sausage, choose your favorite)
  • 100g Beef (for stew or stir-fry)
  • 1/2 Zucchini
  • 1 Tbsp Minced Garlic
  • 1-2 Cheongyang Peppers (adjust to spice preference)
  • 5-10 Perilla Leaves

Sauce

  • 1 Tbsp Gochujang (Korean chili paste)
  • 1/2 Tbsp Doenjang (Korean soybean paste – optional, for umami)
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Oligodang (corn syrup) or sugar
  • 1 Tbsp Oyster Sauce
  • 3 small Korean soju glasses of Water (approx. 150ml)
  • Generous amount of Cooking Oil
  • A pinch of Sesame Seeds

Cooking Instructions

Step 1

Let’s start by making the special sauce for a delicious sundae stir-fry! In a large bowl, combine 1 Tbsp gochujang, 1/2 Tbsp doenjang (adds a nice depth of flavor!), 1 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp oligodang, and 1 Tbsp oyster sauce. Mix them well. Using ‘one spoon’ as a consistent measure for most ingredients makes it even easier!

Heat a generous amount of cooking oil in a pan. Add the minced garlic and the zucchini cut into bite-sized pieces, and stir-fry them until fragrant. Continue cooking over medium heat until the garlic turns golden brown and the zucchini becomes translucent. Pre-sautéing the vegetables like this significantly enhances their flavor.

Once the garlic and zucchini are partially cooked, add the sundae, thinly sliced beef, and diagonally sliced Cheongyang peppers. Stir-fry everything together. When the ingredients begin to cook slightly, pour in all the prepared sauce. Add 3 small soju glasses of water (about 150ml). Stir and cook over medium-low heat, ensuring the ingredients don’t burn and the sauce coats everything evenly.

When the sauce has evenly coated all the ingredients and the liquid has slightly reduced, you’re almost done! Finally, add the perilla leaves, washed and torn into pieces. Stir-fry briefly just until they wilt slightly. The fresh aroma of the perilla leaves will add another layer of deliciousness. Turn off the heat, sprinkle with sesame seeds, and your spicy and sweet beef and sundae stir-fry is ready to enjoy!
