Main Ingredients

  • Glass noodles (Dangmyeon) 80g
  • Fish cake (flat type) 1 sheet
  • Carrot 1/3
  • Shredded cabbage 1/2 handful
  • Pickled radish (Danmuji) 30g

Spicy & Sweet Sauce

  • Soy sauce 3 Tbsp
  • Minced garlic 1 Tbsp
  • Red pepper flakes (Gochugaru) 1.5 Tbsp
  • Sugar 0.5 Tbsp
  • Oligosaccharide (or corn syrup) 1 Tbsp
  • Vinegar 1 Tbsp
  • MSG (optional) a pinch
  • Sesame oil 1 Tbsp
  • Sesame seeds 1 tsp

Cooking Instructions

Step 1

First, prepare all the vegetables for your Bibim Dangmyeon. I’m using carrots, pickled radish (danmuji), and cabbage which I have at home. Thinly shred each vegetable. For the carrot, slice it thinly, and also shred the danmuji and cabbage into bite-sized pieces.

Lightly grease a pan with cooking oil and heat it over medium heat. Add the shredded carrots and stir-fry them briefly, just until they are slightly tender but still retain some crispness. Be careful not to overcook them.

Bring a pot of water to a rolling boil. Add one sheet of fish cake and blanch it for about 30 seconds to 1 minute. This step helps remove any fishy smell and softens the texture of the fish cake.

Once blanched, drain the fish cake and rinse it briefly under cold water. Then, thinly slice it into strips that will easily mix with the noodles and vegetables.

Now, let’s make the delicious Bibim Dangmyeon sauce. In a bowl, combine 3 Tbsp soy sauce, 1 Tbsp minced garlic, 1.5 Tbsp red pepper flakes, 0.5 Tbsp sugar, 1 Tbsp oligosaccharide, 1 Tbsp vinegar, a pinch of MSG (if using), and 1 Tbsp sesame oil. Whisk everything together until the sugar is dissolved and the sauce is well combined. Your perfect sauce is ready!

In another pot, bring a generous amount of water to a boil. Add 80g of glass noodles (dangmyeon) and cook for about 7 minutes, or until they become translucent and pleasantly chewy. Cooking time may vary slightly depending on the brand of noodles, so check for doneness.

Once the glass noodles are cooked, drain them and immediately rinse under cold running water. This quick rinse prevents the noodles from sticking together and becoming mushy, ensuring a perfect al dente texture.

In a large mixing bowl, combine the drained chewy glass noodles with the stir-fried carrots, shredded pickled radish, shredded cabbage, and sliced fish cake. Pour the prepared spicy and sweet sauce over the ingredients. Gently mix and toss everything together until all the components are evenly coated with the sauce.
