Main Ingredients- 9 Shiitake Mushroom Mandu (dumplings)
- 3 servings Somyeon (thin wheat noodles) or Rice Noodles
- Kimchi (fermented cabbage), to taste
Bibim Sauce- 3 Tbsp Savory Soy Sauce (or regular soy sauce)
- 2 Tbsp Sesame Oil
- Generous amount of Toasted Sesame Seeds

Cooking Instructions
Step 1
First, preheat your air fryer to 180°C (350°F). Place the shiitake mushroom mandu inside and air fry for 10 minutes. Flip the dumplings and continue to cook for another 5 minutes at 175°C (345°F) until golden brown and crispy. (Tip: Keep an eye on them as they might brown quickly; adjust cooking time as needed.)
Step 2
Lightly rinse the somyeon (or rice noodles) under cold running water to remove any dust. Bring a large pot of water to a rolling boil. Add the noodles and cook for approximately 4 minutes and 30 seconds. Stir occasionally to prevent them from sticking together. Once cooked, drain the noodles and rinse them under cold water to remove excess starch, then drain thoroughly.
Step 3
In a mixing bowl, combine the cooked noodles with the bibim sauce: 3 tablespoons of savory soy sauce and 2 tablespoons of sesame oil. Gently mix the noodles and sauce with your hands, ensuring every strand is coated evenly. (Tip: For a touch of sweetness and tang, consider adding a little sugar or vinegar to your liking.)
