Main Ingredients

  • 500g chicken tenderloin
  • 500ml milk
  • Pinch of salt
  • Pinch of black pepper
  • 1 Tbsp cooking wine (mirin or sake)
  • 2 Tbsp sesame seeds

Spicy & Sweet Braising Sauce

  • 1 Tbsp gochujang (Korean chili paste)
  • 0.5 Tbsp sugar
  • 1 Tbsp soy sauce
  • 0.5 Tbsp minced garlic
  • 0.5 Tbsp minced ginger
  • 1 Tbsp sesame oil
  • 2 Tbsp corn syrup (or mulyeot)
  • 2 Tbsp ketchup
  • Pinch of black pepper

Cooking Instructions

Step 1

Place all the chicken tenderloin in a large bowl. Pour 500ml of milk over the chicken, ensuring it’s fully submerged. Let it soak for about 15 minutes to effectively remove any gamey odor from the chicken.

After soaking in milk, rinse the chicken tenderloin thoroughly under cold running water to remove any milk residue. Drain the chicken well using a sieve. This step ensures a clean flavor in the final braised dish.

Cut the drained chicken tenderloin into bite-sized pieces (about 3-4 cm). Place the cut chicken in a pan. Sprinkle 1 Tbsp of cooking wine over the chicken to further eliminate any odor. Season lightly with salt and pepper. Sauté over medium heat until the surface of the chicken is lightly golden brown.

While the chicken is browning, prepare the braising sauce. In a mixing bowl, combine 1 Tbsp gochujang, 0.5 Tbsp sugar, 1 Tbsp soy sauce, 0.5 Tbsp minced garlic, 0.5 Tbsp minced ginger, 1 Tbsp sesame oil, 2 Tbsp corn syrup, 2 Tbsp ketchup, and a pinch of black pepper. Stir well until all ingredients are thoroughly combined to create a delicious braising sauce.

Pour all the prepared braising sauce over the chicken that has been browned in the pan. Reduce the heat to medium-low. Stir to coat the chicken evenly with the sauce and begin to braise.

Continue to simmer over low heat, stirring occasionally, until the sauce thickens and coats the chicken beautifully. Be careful not to let the sauce burn. Simmer for about 5-7 minutes, or until your desired consistency is reached. Once the sauce has reduced to a nice glaze, turn off the heat.
