- 1/2 stalk of green onion
- A little sesame oil
- A little toasted sesame seeds
Seasoning Sauce- 6 Tbsp Gochugaru (Korean chili powder)
- 5 Tbsp Soy sauce
- 2 Tbsp Oyster sauce
- 1 Tbsp Plum extract (optional)
- 2 Tbsp Sugar
- 1 Tbsp Minced garlic
- 2 Tbsp Cooking wine (Mirin or similar)
- 1/3 cup Water (approx. 60ml)
- 6 Tbsp Gochugaru (Korean chili powder)
- 5 Tbsp Soy sauce
- 2 Tbsp Oyster sauce
- 1 Tbsp Plum extract (optional)
- 2 Tbsp Sugar
- 1 Tbsp Minced garlic
- 2 Tbsp Cooking wine (Mirin or similar)
- 1/3 cup Water (approx. 60ml)
Cooking Instructions
Step 1
First, rinse the chicken pieces thoroughly. To remove any gamey smell, soak them in milk for about 30 minutes. While the chicken is soaking, thoroughly rinse the bean sprouts under running water and drain them well in a colander. Slice the green onion diagonally.
Step 2
Rinse the chicken pieces that were soaked in milk under cold water to remove the milk. Place the chicken in a pot, add enough water to cover the chicken, and boil for about 10 minutes. This step helps to remove impurities from the chicken.
Step 3
While the chicken is boiling, let’s prepare the delicious seasoning sauce! In a bowl, combine 6 Tbsp Gochugaru, 5 Tbsp soy sauce, 2 Tbsp oyster sauce, 1 Tbsp plum extract (you can omit this if you prefer less sweetness), 2 Tbsp sugar, 1 Tbsp minced garlic, 2 Tbsp cooking wine, and 1/3 cup (approx. 60ml) water. Stir well until the sugar dissolves.
Step 4
Drain the chicken after boiling it for 10 minutes. Return the chicken to the pot, add the prepared seasoning sauce and 1/3 cup of water. Stir well over medium-high heat to ensure the chicken is evenly coated with the sauce. Continue to simmer, stirring occasionally to prevent sticking.
Step 5
Once the chicken has simmered and reduced slightly with the sauce, add all the prepared bean sprouts and cover the pot with a lid. Cook for about 5 minutes to keep the bean sprouts crisp and fresh. It’s important to open the lid occasionally and stir everything together to ensure the chicken and bean sprouts are evenly coated with the sauce.
Step 6
When the bean sprouts have softened slightly and the ingredients are well braised, add the sliced green onions and simmer for another minute or two. Finally, drizzle in some sesame oil for added aroma and mix well with the other ingredients.
Step 7
Serve the braised chicken with bean sprouts generously onto a plate. Sprinkle with toasted sesame seeds for a finishing touch. Enjoy your delicious, spicy, and slightly sweet braised chicken!
