Let’s make a delicious braised grenadier and radish dish, featuring tender kodari and large chunks of refreshing, sweet radish. It’s a flavorful meal that’s perfect for a cold day!
Main Ingredients- 3 pieces of prepared grenadier (Kodari)
- 1/3 Korean radish (Moo), about 200g
- 1 medium onion
- 1 stalk of green onion (scallion)
- 3-5 Korean chili peppers (Cheongyang chili peppers), adjust to your spice preference
Seasoning Ingredients- 2/3 cup soy sauce (approx. 130ml)
- 3 Tbsp gochugaru (Korean chili flakes, approx. 30g)
- 3 Tbsp sugar (approx. 30g)
- 2 Tbsp fish sauce (approx. 20ml)
- 2 Tbsp gochujang (Korean chili paste, approx. 20g)
- 1 Tbsp minced garlic (approx. 15g)
- 2/3 cup soy sauce (approx. 130ml)
- 3 Tbsp gochugaru (Korean chili flakes, approx. 30g)
- 3 Tbsp sugar (approx. 30g)
- 2 Tbsp fish sauce (approx. 20ml)
- 2 Tbsp gochujang (Korean chili paste, approx. 20g)
- 1 Tbsp minced garlic (approx. 15g)
Cooking Instructions
Step 1
Let’s begin making the delicious braised grenadier and radish by preparing all the ingredients.

Peel the Korean radish and cut it into large, 1.5cm thick cubes. Slice the onion into similarly large pieces. Cutting the vegetables into larger chunks helps them maintain their texture and prevents them from breaking apart during cooking.

Slice the green onion diagonally into large pieces. Also, slice the Korean chili peppers diagonally. You can adjust the number of chili peppers based on how spicy you like your food.

In a wide pot, arrange the large chunks of Korean radish at the bottom. The refreshing flavor that the radish releases will meld beautifully with the grenadier, creating a deeper, more complex taste.

Place the cleaned and prepared grenadier pieces neatly on top of the radish. It’s best to cut the grenadier into manageable pieces beforehand.

Arrange the sliced onion, green onion, and chili peppers evenly over the grenadier. This step not only adds beautiful color but also enhances the overall flavor profile of the dish.

Now, let’s prepare the braising sauce. In a bowl, combine 2/3 cup soy sauce, 3 Tbsp gochugaru, 3 Tbsp sugar, 2 Tbsp fish sauce, 2 Tbsp gochujang, and 1 Tbsp minced garlic. Mix well. Pour this prepared sauce evenly over the ingredients in the pot. Finally, add 3.5 cups of water, ensuring the ingredients are mostly submerged.
Step 8
Cover the pot and bring it to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer for about 20-30 minutes, or until the radish is tender and has absorbed the flavors, and the sauce has thickened slightly. Basting the fish with the sauce occasionally will make it even more delicious. When the radish turns translucent and the sauce is nicely reduced, your flavorful braised grenadier and radish is ready!
