Spicy & Sweet Canned Snails Bibim Ramen (Gol-bim-myeon)
Highly Recommended Summer Menu: Gol-bim-myeon (Canned Snails Bibim Ramen)
This is a slightly modified version of the recipe created by Kim Dong Wan from the popular Korean show ‘Happy Together,’ specifically from its late-night snack segment. It’s perfect for a refreshing summer meal.
Ingredients- 1 pack of bibim ramen (spicy Korean mixed noodles)
- Canned snails, to your preference
- 1 handful of enoki mushrooms
- 4-5 fresh lettuce leaves
Cooking Instructions
Step 1
While the water for the noodles is coming to a boil, prepare the enoki mushrooms. Trim the base of the enoki mushrooms and rinse them thoroughly under running water. Set aside the canned snails, keeping the liquid. You can chop the snails into bite-sized pieces if desired.
Step 2
Add the bibim ramen noodles to the boiling water. When the noodles are almost cooked, add the prepared enoki mushrooms. Enoki mushrooms cook very quickly, so adding them in the last minute will ensure they retain a pleasant texture.
Step 3
Once the noodles and enoki mushrooms are cooked, drain them and immediately rinse under cold running water or ice water. This process makes the noodles wonderfully chewy and firm, ensuring they mix perfectly with the sauce.
Step 4
In a bowl, combine the chewy noodles and enoki mushrooms. Tear the lettuce leaves by hand and add them. Mix in the bibim ramen sauce packet and the liquid from the canned snails. Toss everything together until well combined. Your delicious Gol-bim-myeon is ready!
Step 5
Instead of lettuce, feel free to use other leftover vegetables that pair well with mixed noodles, such as thinly sliced cucumber or shredded cabbage. Adding a bit of shredded radish can also offer a refreshing crunch. Get creative with your vegetable additions!
